Chocolate Chip Cookies vs Cookie Cake vs Blondies

- Chocolate Chip Cookies (yield: 2 dozen cookies)
1 cup (200g) granulated sugar
1 cup (200g) brown sugar
2 tablespoons (16g) toasted milk powder*
10 ounces (284g) unsalted butter, softened
2 eggs
1 tablespoon vanilla extract
3 cups (420g) all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon fine salt
14 ounces (397g) chocolate chips or chunks
1. Cream butter, sugar, brown sugar, and toasted milk powder together until fluffy and lightened in color, approximately 4-6 minutes. Scrape down the bowl.
2. Add the eggs and vanilla one at a time, waiting until the first is completely incorporated before adding the next.
3. Mix in the dry ingredients on low speed just until there is no visible dry flour.
4. Add the chocolate chips and mix just until combined..
5. Optionally, cover and refrigerate the dough for at least thirty minutes or up to overnight.
6. Scoop onto a parchment lined tray. For a number 20 scoop (roughly 3 Tbsp) bake at 375F (190C) for 12-15 minutes or until golden brown just around the edge.

4. Add the chocolate chips and mix just until combined..
5. Divide between two 8-inch round cake pans that have been prepared with non-stick spray and a circle of parchment paper. Bake at 325F (163C) for 35-45 minutes or until a light golden brown.
Chocolate Chip Blondies (yield: one 13x9 inch pan)
2 ¼ cups (450g) brown sugar
10 ounces (284g) unsalted butter, melted and cooled
2 tablespoons (16g) toasted milk powder*
3 eggs
1 tablespoon vanilla extract
2 ¼ cups (315g) all-purpose flour
1 teaspoon baking powder
1 teaspoon fine salt
14 ounces (397g) chocolate chips or chunks
1. Combine brown sugar, melted butter, and toasted milk powder.
2. Add the eggs and vanilla and mix until fully incorporated.
3. Add in the flour, baking powder, and salt, mixing just until no dry flour remains.
4. Mix in the chocolate chips and spread into a 13x9 inch pan that has been prepared with non-stick spray and a rectangle of parchment paper on the bottom
5. Bake at 350F (177C) for 30-40 minutes or until golden brown.
*To make toasted milk powder, spread non-fat milk powder in a thin layer on a parchment lined sheet pan. Bake at 300F (150C) for 15-20 minutes or until a light golden brown. Store in an airtight container and add a tablespoon or two to any baked good that would benefit from an extra toasty, toffee flavor.
I genuinely love this channel. I’ve been an at home baker for a few years now, always relying on online recipes. I feel like now, it is easier to visualize how the foods come together and understand the differences, and for that, thank you very much.

Personally, I melt the butter for my chocolate chip cookies as well. I like the texture of the finished cookie (it’s more chewy) and it’s easier than softening the butter. But to each their own- you really can’t go wrong with a chocolate chip cookie 🍪 😋

Exactly! This is why I have started baking since April this year, its satisfying seeing how different ingredients react to each other and result in something different. And I sucked at chemistry so it makes me more determined to learn more in baking😅

@seraeggobutterworth5247 Try both the brown butter and toasted milk powder together for a super incredible outcome. 😂 It gives you a super boogie expensive bakery results for little effort. If you use them both in cookies make a huge batch and freeze the rest and bake as you want them. It gives an incredible extra special rich result and even top restaurants freeze their cookie dough for at LEAST 3 days minimum before baking. It gives all the dry ingredients time to fully hydrate and gives the cookie dough time to mature. And you always have cookies on demand. 😂 Win win. But you definitely should add brown butter and toasted milk powder. Once you make your giant batch you simply split into the desired size of dough balls and freeze. Then just pull them out and bake as required. 😂

Hehe, using the deli container's lid for the butter is a trick that I use too. Also good for scaling small amounts of spices if one doesn't want to dirty a bowl and has already used the matching deli container for other ingredients!

Hi, I know you probably won’t see this but to anyone out there, I’m looking for a video about cake box mixes and pretty much what I’m looking for is the ultimate “edit” guide, i want to know what happens if I use milk instead of water, butter instead of oil, if so then should the butter be melted or softened? I know you can add more or no eggs but what does less eggs do? If I use water rather than previously mentioned milk is butter still a good option?
I’m not like, in need of assistance of how to use a cake mix or anything, but I can’t find any videos on TWEAKING the ingredients and instructions, like how you can ‘edit’ the recipe to your liking, not the the same way you can alter a cookie recipe to be a specific kind of cookie, does someone have a guide for cake mix like that? Again not a biggie but it’s interesting for me that there’s not an answer that pops up first thing 😅

Regular chocolate chip has both brown and white sugar while blondies only use brown. Blondies also have less flour and baking soda added.
