Nanaya is the unused part of Shiki because the Nanaya clan were a group of humans who killed dangers to humanity like vampires and monsters. This is also why Shiki has such strong impulses when near a vampire, his Nanaya blood is telling him that the creature should not exist in this world, it needs to be destroyed. Considering that he not only has a sister who is basically a vampire, but is in a relationship with a true vampire, he obviously doesn't agree with those feelings.
I thought Nanaya clan(and rest of demon hunter clan) only hunting mixed blood of human and demon, outside from that they not counting as prey(if not maybe people like Zouken or Araya are hunting by them🤔)
This Nanaya has eyes because, like those created by the Tatari, he's a representation of fear and rumors. He's just the personification of the Satsujinki, the killer which Shiki fears to become if he's overcome by Nanaya's bloodlust. Nanaya just tends to use his family's killing techniques instead of his eyes most of the time due to him being... er... a Nanaya.
You have Shiki Tohno, a good guy who was trained as a toddler/boy to be an assassin/killer of the supernatural. Nanaya(created by Tatari and then White Len) is what Shiki fears he could become, a merciless killer that enjoys his work and disregards life.
I hate how Nanaya basically dies in both his endings for Act-Cadenza and Re-ACT. Sure he dies epically in them, but I feel that considering he's one of the most liked characters in Tsukihime/Melty Blood, I can't help but think that he deserves better than two endings of ironic inevitability.

With Type-Moon, it's a bit odd. There's a character named Zelretch who has the ability to travel across parallel universes, all with altered possibilities. Most people have accepted this as every ending in Tsukihime being canon in its own universe, so the same probably applies to Melty Blood. But there are certainly some endings that are "more" canon than others, Shiki Tohno and Akiha come to mind, since their after battle talks usually imply the opponent lives.

"Satsujinki" is the name that the Dead Apostles gave Shiki when he decided to guard Arcueid until she woke up, but I'm not certain if it's actually canon.
Actually the story about that is real canon and they are part of Tsukihime material story the Talk and Prelude who suppose to be are prolog Tsukihime 2
Aoko says that she will slam Nanaya to hell, but there's one thing that didn't occur to her. She's not Chuck Norris. Not even Satsujinki can kill Chuck Norris because he cannot die. It's that simple. His death is something that is not able to be percieved by ANYONE.

Nanaya is just simply his repressed urges to kill supernatural creatures that threaten humanity, so you're right. Nanaya doesn't have Death Perception in KT because the entire story is an ongoing dream fabricated by Len. If I recall correctly, Tohno doesn't have it either.
