Well, modern Cantonese retains many elements from Middle China (during Tang) but it's changed enough that I doubt you could converse with the people back then.
I thoroughly enjoyed this video and more so hearing Felix speak in Cantonese. I am Hakka Chinese and only learned Cantonese by watching Hong Kong TVB dramas when I was little. I wonder why Cantonese wasn't picked as the standard or official language of China way back then when they were deciding on an official/standard language. Could it be because of its many tones, more so than in Mandarin.
More likely the Mandarin speaking northerners pushes Cantonese speaking people further to the south, taking over the monarchy at certain point of the dynasty, and eventually migrated to southern China. Majority of Chinese poetry make sense and smoother singing-like when recited in Cantonese.

呃，严格意义来说，五洞牛肉不算是顺德菜。五洞是广东江门的一个村，那里整个村都是卖牛肉的。而这个五洞牛肉，我觉得源头还是潮汕牛肉，因为无论是对牛肉的分类和沙茶酱的存在，都是潮汕牛肉的一种明显特征
沙茶酱的起源不在潮汕是印尼。是二战时期那些过番南下到马来亚和石乐坡的潮汕人带回潮汕。
