I love pacha manga it's my absolute favourite especially with salt and chilli *chef's kiss*. This is literally my childhood, so much nostalgia.
When I was a kid I still remember. During summer, My mom would pluck few green mangoes peel out the skin and shred it and then she would mix it with green chilli and salt and serve it on banana leaves, it was our comfort food back then. Man, those were the days!!
In school we used to eat it in between classes 😂

there's another one sauce in Philippines...we use fermented baby shrimp paste and add a bit vinegar for more flavor...we love it, but it's pregnant women's delicacy one of the few that they can tolerate eating even though the scent is pretty strong plus raw green mango help with their morning sickness and they won't get sick of it...just control them from eating in the early morning because it can be very acidic with empty stomach

That is one of my favourite fruits everr! I love it. In my country we make a lot of dishes with that. And we have a sauce, so we normally dip it in the traditional sauce and eat, its sooo good.
OMG I am from the south and I am so happy you are able to appreciate the south. Many people only go to the north and all the beauty in the south goes un appreciated. I love manga as a Tamilian I love Manga. My fav snack during summer. Essentially has to be eaten with chilli powder. ( THATS THE BEST )

This tastes good as a fruit chaat/salad with salt, green chilly, the tiniest bit of sugar and mustard sauce (kasundi)
We filipinos do something similar we either put salt or soy sauce and sugar. Though it tastes better if the mango is slightly sweet so that its not as sour.
And we as kids use to pluck unripe mangoes and eat them while playing cricket or football during our school's summer vacations. 😋
