How do you ensure the players have the opportunity to figure out the "fatal flaw" without handing it to them?

That's frequently a matter of laying clues that point to the beast's weakness. These could be anything from in-game folklore to interviews with survivors to plain old trial and error. The trick is to put plenty of these clues throughout the adventure so that the characters can miss one or two and still be able to figure it out.
