Elderflower Cordial...
The perfect remedy for summer heat!
This delightful drink is great for the whole family to enjoy, it can easily be added to water and sparkling water, or in mixed cocktails and white wines.
Making Elderflower cordial is a fun and simple way to preserve the wonderful qualities of spring Elderflower blossoms.
These flowers are only in bloom for a few weeks, this is a great way to enjoy their flavour all summer long.
A variation on this can recipe can also be made to ferment and create a great tasting elderflower mead, wine or kombucha.
Ingredients:
1.5 kg honey (sugar optional)
2 litres boiling water
2-3 medium lemons, washed
400g-450g of fresh elderflowers, de-stemmed. (Alternatively 200g-250g if dried elderflowers)
50g citric acid, or acid blend (available at any wine making store)
Add all ingredients together, let sit for 3-5 hours, filter and enjoy with loved ones..

Let the bugs leave on their own, by leaving the flowers on a table for an hour or so, before washing them. The bugs hav lives like you and me. x

Compared to the other additives in this chapter, citric acid isn’t so bad. That said, it’s very irritating to the linings of the stomach and the intestinal tract, so it can create a lot of inflammation and discomfort if you’re sensitive to it. Citric acid (the additive) is not the same thing as naturally occurring acid in citrus. Try not to confuse the two. Citrus itself is a healing food. The isolated ingredient citric acid, however, is often corn derived. Elder flowers are amazing for making syrup, cordial, tea and fermented. It's one of my favorites I can drink it daily.

You mention that the leaves, twigs and stems give a little bit of a bitter flavour and are not so nice, but it's a good idea to remove these because of their cyanide content. Apparently, there is less cyanide in the berries than the flowers. But, the devil is in the dose, as they say. I am going to make up a small batch using your ratios. Lovely video, thanks.

can you give me the ENGLISH measurements please as american and english are different.. i learned this the hard way when some recipes i had went wrong.. also can you use something instead of powderd citric acid... i am sure in olden days gone by they didnt have this, so there must be another way they made this... although yours is the closest i have come to natural ..

I'm also thinking of putting a negt over mine because pits like I'm waiting, waiting...waiting, until they're ripe. Then as soon as they are. Like the day of, the birds have eaten 2/3rds before I get there! Ha. Maybe I should just plant more so there's enough for all.
Birds and Berries are commonly a problem... possibly putting out a bird feeder a week or 2 before they are ready would help
Birds don't seem to bother my elderflowers in Canberra, and I usually get loads of berries. Unless, we get hail in December, and then the whole crop of flowers is gone in a few seconds.
Hunting some elderberry tree seedlings specifically because my favourite elderflower and lemon cordial was discontinued - was my favourite mixer for gin or just on its own on a hot day 😞 Just wondering if its possible to still get a decent harvest of flowers whilst still leaving some on the tree to become berries? Interested in using the berries for medicinal purposes as well. Do the trees produce a lot of flowers? Enough to use some for cordial and leave the rest for berries?

Yes you can, if you tweak the recipe and add extra sugar and yeast you can make it into an alcoholic beverage.
It is possible to do a kombucha, but you have to be careful not to wreck the scoby, as they require the tannins from black tea, and don't always respond well to adding other herbs into the mix.
Herbal Jedi, I was thinking on the 2nd ferment without the scoby. When you do your flavorings & carbonation process. Sounds delicious.
@@Herbal_Jedi just use the elder flowers added to the individual bottles at the second ferment. the booch is already ready, except for the flavoring you choose. And there is NOTHING quite like the fragrance of elder flowers.
i have thought of doing this but always think that it is better to just make tea and put honey in it. does putting honey in with water and herb make a big difference? what alchemical magic is happening when we do this? also what do we do with your milk thistle? lol

thedogs maid look for elderflower champagne if you want dsome alcohol... this is a non alcoholic drink that has been loved for many many years here in england.. you ADD water to the cordial, as it is in a condensed liquid.

The bugs usually pack up and leave if you pick them and let them dry for a day or two before using..
