Very confusing the first adjustment you demonstrated you used the bottom cog to adjust the loft, the second example you used the top cog to adjust the loft?

Is it the wrench that is used or is it the club head that clicks when the screw are tightened? Was wondering if I could use a standard “torx” wrench or is it an actual torque wrench?
