Degi Yakhni Pulao Written Recipe :
Ingredients:
Chicken leg both 1-1/2 kg
Ground Coriander 2 tbsp
1 Onion sliced (large)
Mace 1 (small)
1 pinch Mace
Fennel 3 tbsp
Whole allspice 2 Tbsp
Salt 1 tbsp
Rice 1 kg
Oil 1 cup
1 Onion sliced (large)
Black cumin 1 tbsp
White Cumin 1 tbsp
Black pepper 1 tbsp
Cloves 6-8
Green chili paste 1 cup
Garlic Chopped 2 tbsp
Tomatoes sliced 3
6-8 Green chillies
Tamarind pulp ½ cup
Chicken stock 2 liters
Method:
In a cooking pot, cook the chicken stock, chicken, coriander, onion, mace, nutmeg, fennel, whole spices, and salt for 10 minutes. Then take out the chicken and keep aside and cook the chicken stock for another 10 minutes. Now strain it and keep it aside. Heat oil in a separate pot, and fry onion and garlic until golden. Then add whole spices and chicken stock and boil. Add chicken and rice and cook for 5 minutes. Add tamarind pulp, tomatoes, and green chilies and cook on low heat for 20 minutes and serve.
Tomato Sauce Written Recipe :
Ingredients:
Tomatoes (skimmed and chopped) 375 gm
Curry leaves 12-15
Garlic Chopped 2 tbsp
Salt 1 tsp
Oil ¼ cups
Green chilli sliced 4
Method:
Heat oil in a pan and fry the garlic. Then cook curry leaves, salt, green chilies and tomatoes in it for 10 minutes and serve.
