I used to exclusively use Chicken Breast, but I was making chicken tacos a while back and decided to take Sam's advice and use Chicken Thighs. Best chicken tacos EVER. Chicken Thighs 100%.

Chicken thighs always. One way I make them is placing them in a pressure cooker with thousand island dressing and sauerkraut. After it is done, melt Swiss cheese on top 🥰

Chicken breast, thighs, and wings, I regularly use them all. In fact have all currently in either my fridge or freezer to use in the next week or so for different dishes. It really just depends on what I plan on using them for as to what part of the chicken I will use.

If cooked correctly I like a Chicken Breast, but more often than not the Thigh is my go too. As for the banter about seasoning, it reminded me of what my wife does sometimes. She will see me seasoning something and will say don't put too much of something she doesn't like it. I will ask if she liked whatever it is last time and only once did she say no, so I ignore her except for that one time. My daughter can be that way too. The other day she said she didn't put Vanilla into anything and I asked if she like my pancakes to which she said yes. I put a tablespoon for every cup of milk. Cooks got to be cooks and those who don't kibitz.
103 videos in a row asking, could you please make a smoked salmon pizza 😊 Here's the deal. I had a smoked salmon pizza in Alaska 15-years ago and it was amazing. I remember roughly what was on it and I could go to that restaurants site and try and find the ingredients or look on plenty of other websites and find a recipe. The salmon was not served like loks, I believe there was some cooking in the oven involved. They may have done it in two stages. This is one of the things I would like to know.
However, I would like to see a Sam's take on it. I think it would be entertaining since Sam always fights with pizza dough, I like watching Sam and think it would be cool if he used my idea, and I started this when he was giving knives away. He may be done with that, but I started and will see it through.

I think the first iteration of that machine appeared at the 1962 World's Fair in Seattle. The machine made "Spaceburgers." Many of the old machines languished in some old barn for decades. They now make an appearance twice a year at the Moses Lake, WA fairgrounds. Delicious.

Mexican Lasagna (Can you try)
Ingredients:
2lbs ground beef
28oz Tomato sauce
1 cup ea Diced tomatoes and green chillies
1 can red kidney beans
1 cup sliced olives
1 onion diced small
1 large bell pepper diced small
1 1/2c mushrooms diced. Optional
1 Lrg bag Mexican blend cheese
1/3c Taco seasoning split
4- 12" flour Tortillas (2 cut in half)
Directions:
Cook ground beef and add half of taco seasoning. Combine all other ingredients except tortillas and cheese in large bowl with remaining seasoning.
Layer ingredients in 9x13 pan. Start with mixture then cheese and then tortillas (one whole and 2 halves to create layer). Repeat and finish with mixture layer and cheese. Bake in 350° oven for 25-30min.
Breast for me but it depends on how im making chicken. Sometimes a dish is better with thighs like chicken marsala or chicken piccata.

Maybe you can repurpose a waffle iron with inserts to do the same. Damn.. Now I'm thinking of a Mexican twist. Carne Asada, Taco, Burrito. All you're doing is changing the shell. Thanks Sam. Things every day of the week!
When I was a kid in the early 60's we had a thing called a Quickzee iron. It was either round or square. Not as deep as for OFO but it made brilliant cheeze and onion toasties. Cooked on a fire. Either or on breasts/thighs. Cook the breast using a instant temp probe and it is as juicy as ever.

Thighs are the vastly superior cut for just about everything from a flavor perspective, for me. I do use chicken breast, well marinated, for things that are saucy/oily already - like a chicken quesadilla. I could do chicken breast for a fried-chicken sandwich as long as it's not cooked into dry oblivion.

I used to be totally breast, globs of fat on the thighs grossed me out. (Fyi, we grew our own chickens.) At about age 47 or so, I "discovered" thighs. Flavor is better, far is roughly the same. And the thigh is very versatile.
Both have their place but for this application the thigh is king
