Beetlejuice‘s obsession with theatrics is his real undoing. It gave the Maitland’s time to stop him in the first movie, and Dolores time to catch up with him in this one.
He had what he thought was a full proof contract that he probably thought about for 36 years. He took his time because to him, he'd already won. Unlike the first wedding attempt where he tried to speed through it, for this one he took his time and made it memorable for himself. No one knew a Lydia's daughter could speed read an entire book and find exactly what she needed to save the day.

I gotta say I really love that Beetlejuice is still carrying a torch for Lydia herself in this movie considering that it would’ve been all too easy to just simply make him forget about Lydia and then have him set sites on her daughter just to make him more of a creep.
