It's interesting that the studio people say "it's going to be as _big_ as Horsin' Around" whereas Bojack retells it as them saying "it's going to be as _good_ as Horsin' Around." Like the potential success of it scares him (which "as big as Horsin' Around" implies) rather than the possibility of it not being enough of a success (which "as good as Horsin' Around" implies). More than likely it's both.
The dead shark is a reference to Damien Hurst who was a sculpture artist that became famous in the 1990s and early 2000’s and cancelled in 2010-15. He still makes art today. He is considered one of the richest artists in the UK alive atm so it’s probably a reference to his works. He had multiple dead animals in formaldehyde and other suspension fluids. Including sawed in half animals. His cancellation was due to human skulls and other human remains along with it mimicking other artworks by other artists or cultural appropriation. Idk if he was using actual bodies or if that was a rumor or discussions around animal conservation and shark/dolphin/whale/seal life being used in art over scientific preservation. Many museums were also getting exposure of their animal collections in the early 2000s along with many old abandoned aquariums (after sea world and many others closed down) being explored by bloggers/vlogers there was a lot of shark tanks that were popularized.
The sopranos joke was that the final scene in the sopranos cut to black in a weird way so the joke is todd like ripped a part of it and that's the reason for the cut to black ending

Sopranos is famous for the last episode ending abruptly, basically in the middle of a sentence. The joke in this episode was that Todd caused this by accident.
This series has so much more to offer and I so can't wait for ya'll two too see more of it. Bojack is an very complex character who have decent also good parts about himself shown throughout the rest of the seasons every now and then, but its still doesn't change the fact that he's basically a toxic asshole person who is highly very self destructive and tends to often times ruin things for himself or tends too always put the blame on his past / upbringing which does explain the reason why he ended up the way he did. But it still don't excuse his overall shitty behavior, just because you had a awful childhood or grew up with crappy parents doesn't excuse you from being a shit person or how you treat others...because at the end of the day as a grown adult person your fully responsible for your own actions and behaviors and what you do with yourself.

A big part of bojacks character is being stuck in the past, and with episode this aspect is now literally shown directly in his character design.
I feel kinda sad for them, they are 3 seasons in and they still don't really allow themselves to just laugh at the parts they find funny. They still feel the need to say "that's stupid" every single time.
Fun fact: Jessica Biel played herself and encouraged the writers to put in more jokes making fun of her.
I honestly gained a lot of respect for her and Daniel Redcliffe when I learned that they played themselves and encouraged mean jokes at their expense.
I love that she was such a good sport about them making fun of her failed acting career.

Without giving too much away, sopranos ending (to Credits) is quite drastic so the joke is real ending got lost and it just abruptly ends.
