Broadly there are 4 types of food in India. Southern type, central, western and Eastern type. The food itself and flavor are totally different in these regions. Again there are differenc withing the regions. Food in 4 southern states differ a lot. The samosa you had is Punjabi type. Biryani was central Indian type. Dosa is south Indian type.
