      Thank you! I just had a vegan friend come to visit - switch out the butter for margerine or nut butter, and the parmesan for vegan cheese or even leave it out alltogether! Add some delicious roast sweet potato cubes for extra flavour ;)

    Did you wash the rice before using it? Or just straight into the pan to keep it starchy?

      I did not wash the rice - with risotto, you want a creamier, starchier texture to ensure cohesion. :)

    Do you think this would work with kombu dashi instead of chicken stock?

      I think that would work fine - the flavour profile would definitely change, and I'd suggest adding accompaniments that fit. e.g. shallots, maybe a piece of grilled fish :)
