Macatia Coco | Sweet bun filled with coconut

- Mauritian macatia coco are soft sweet buns filled with coconut in the centre. Our childhood memories, running after the macatia seller who was riding his old motorcycle and shouting Macatiaaa cocooooo or Macatiaaaa pena cocooooo. These delights are usually served in the afternoon with a nice cup of tea.
For 12 Sweet buns
Ingredients:
350g All purpose Flour
3 TBSP Sugar
7g Instant or dry yeast
4g Salt (2/3 tsp)
200ml Warm Milk
30 g Soft Butter
For the fillings:
Option 1
8 TBSP of grated coconut (raw)
4 TBSP of sugar
Option 2
8 TBSP of desiccated coconut
4 TBSP sugar
2 TBSP water
Note:
Yeast : A pinch of sugar will make yeast bubble up, thus proving that the yeast is still active and hasn't expired.
Why using warm milk - Warm milk activates the yeast whereas milk that's too hot can damage or kill yeast. All yeasts die at 138°F.
How to work with sticky dough - Lightly dust, with flour, the surface of the dough, your hands, and the working surface.
Pour 12 brioches
Ingrédients :
350g Farine tout usage
3 TBSP Sucre
7g Levure instantanée ou sèche
4 g de sel (2/3 sel)
200 g de lait tiède
30 g de beurre molle
Pour les garnitures :
Option 1
8 c. à soupe de coco râpée
4 TBSP de sucre
Option 2
8 c. à soupe de coco desséchée
4 TBSP sucre
2 TBSP eau
Remarque :
Levure : Une pincée de sucre fera gonfler la levure, prouvant ainsi que la levure est toujours active et n’a pas expiré.
Pourquoi utiliser du lait tiède - Le lait tiède active la levure alors que le lait trop chaud peut endommager ou tuer la levure. Toutes les levures meurent à 138 °F.
Comment travailler avec une pâte collante - Saupoudrez légèrement, avec de la farine, la surface de la pâte, vos mains et la surface de travail.

Can I also ask please. Can these be frozen once filled (unbaked)? If you wanted to make a big batch of them. So you can keep them until you want to make them fresh? Or will the raw dough go bad in the freezer? Thank you so much 🙏

200 g milk = 195 ml milk. You need 1/2 cup and 5 tablespoons to make 200g of milk. It's easier to measure by ML 😊
