Do any of these choppers actually win championships? Or do they just drive the champions insane?
Sometimes, but obviously mostly won by attackers. A chopper won the 2019 Chinese national champions for instance, his second time doing so. Defenders do win open championships across the world too, and some crack the top 20 or even top 10. Last time a defender actually won the world championships though was in the first half of the 50s, just before the introduction of sponge. No coincidence a chopper hasn't won't since, though Joo Sae Hyuk got to the final of the 2003 world championships.

That's not true. Ma Te has beaten Joo Se Hyuk every time, precisely because he's a better attacker. Ma Long is just more familiar with him due to training together.

This kind of match shows that for a defender to ever become a no 1 again (last time was in early 50s I think), he'd have to practically make zero mistakes, both when defending and attacking. That's some ask though. I don't even know if that's possible.
Either that or find a way to bring a lot more spin and variation into the chopping game, to force more errors from the real top guys. That would probably require some new revolutionary equipment though. Long pips while comfortable for chopping and give good control / cushioning, just really limit variety and force players to twiddle to hit on the backhand. Can't vary the backspin as much, apply sidespin that well, and it removes the option of mixing it up and breaking opponents rythymn with the odd attacking exchange from both wings. They can do it on a single wing, but are forced to chop again if hit to their pips. Smooth on both sides I don't think is the answer though. At least not based on current rubber technology.

I agree, but this guy also attacks with FH or BH, and that's why he reminds me of Joo. For example, Chen Weixing uses his FH just for attack and BH just for chopping. This guy is somehow unpredictable, as Joo, but definitely not on his level. Let us say, poor man's Joo See Hyuk

Yup, he is not in the same level as Joo. I saw at least one moderately high ball opportunity for Te on his BH which Joo would have smashed with his signature BH attack, but Te played passively.
Anyway, Joo is past his prime. A random match result in China Super league does not prove anything.
Mark Coen the handling of one ball proves Joo is better than Ma, while Ma beating Joo in a match doesn't prove anything. Interesting Logic.
