The French and Bohemian Absinths are completely different drinks - I drink and like both but they're not the same. The French is a cool drink and has a louche, the Bohemian is warm and has caremelised sugar and no louche (and at the Absintherie in Prague is made as in this video.)
Yes the alcohol gets burned and all that can ruin the taste also. It is a terrible ritual that was never practiced in the past at all, this is just a gimmick that is supposed to seem attractive and interesting to the regular drunkard. They also do not add any water, and you never drink absinthe pure. It is just a tourist trap or gimmick.
Well not much its such a short period of time that it doesnt matter. Point of this is/should be making Absinth sweeter and a bit warm so its drinkable as shot, not as classic French way where you add also cube of suger but cold water. They do it kinda hasty in this pub and i personally did it always myself, you set on fire only spoon the sugar cube and a bit of absinth unitl its melts, then you put it in drink, blow the flame off and drink it :)

In the study, a pot roast was simmered with burgundy for 2 1/2 hours; a chicken dish was simmered for only 10 minutes after the burgundy was added; scalloped oysters made with dry sherry baked for 25 minutes; and cherries jubilee was doused with brandy, then ignited. The results showed that anywhere from 4 to 78 percent of the initial amount of alcohol remained when the dishes were done. The study’s authors concluded that cooking will result in the removal of some, but not all, of the alcohol.
Actually they ARE using the Bohemian method. It's also known as the Czech method. Either way, you're still wrong. The traditional French method involves louching it over a cube and then drinking it. No fire involved.

Czech “absinthe” is low quality garbage - this “ritual” is merely an attempt to disguise that for people who don’t know any better.
