Vorn or Payasam is a traditional south Indian dessert recipe. A pudding made by simmering yellow lentils in coconut milk. Jaggery is used as the sweetner and cardamom for flavour. Sago, cashews and raisins provide a bite and add a contrast to the texture.
Ingredients list:
Thick coconut milk/ First extract - 3 cups
Thin coconut milk/ Second & third extract - 5 cups
Yellow lentils/ split moong daal - 1 cup (washed)
Jaggery - 1 cup (1/2 cup dark + 1/2 cup light)
Sabudana/Sago - 1/4 cup soaked overnight
Raw rice - 1 tbsp (soaked for 10-15 mins)
Cardamom powder - 2 tsps
Ghee/ clarified butter - 2 tbsps
Raisins - 1 tbsp
Cashew nuts - 2 tbsps (roughly chopped)
Salt - 1 big pinch
Notes:
Cooking time is approx. 1 hour (excluding time taken to prep ingredients)
You can use any one type of jaggery as well, it's your choice. Add jaggery by taste, if you prefer it less sweeter add a little less. Avoid adding more as the sweetness tends to intensify on cooling.
If you are using freshly crushed cardamom pods, use a little less as the flavour tends to be more intense.
The Vorn/Payasam will further thicken on cooling.
