I’m curious if it may have been the rind leaching it’s flavor throughout the process? I think you should revisit it but remove the rind and then freeze dry it?
That was my thought as well. The rind is bitter but more dense. Could totally see the flesh dry first and sublimate some of the rind into the rest.

There is a huge difference between a dehydrator and and a freeze dryer. They are using a freeze dryer not a dehydrator.

For those who want to know why the melon becomes fleshy, when the melon was frozen all of the cell walls collapsed; so when they rehydrated the melon the cell structure of the melon became more similar to animal flesh than plant structure.

Try and deep fry sponges to see if they can still hold water afterwards.
If you deep fry a sponge... I am pretty sure the plastic is just gonna melt in the oil and uh. Make a goop of plastic. That is if it won't straight up burn.
Unless you try it with cellulose sponge. Then it should technically still work if you manage to get rid of the oil from it. Temperature of cellulose's decomposition is slightly higher than actual burning point of canola oil. So it won't decompose. Shouldn't.
