    LITTI CHOKHA
    Preparation time 10-15 minutes
    Cooking time 25-30 minutes
    Serving 2-4
    Ingredients
    For Dough
    1 ½ cup Whole wheat flour, गेहूं का आटा
    ⅓ cup Broken wheat, fine powder, दलिया
    Salt to taste, नमक स्वादानुसार
    Water, पानी
    1 tbsp Oil, तेल
    For Stuffing
    ½ cup Sattu, सत्तू
    1 medium Onion, chopped, प्याज
    2-3 Green chilli, chopped, हरी मिर्च
    1 inch Ginger, chopped, अदरक
    2-3 Garlic cloves, chopped, लहसुन
    2 tbsp Coriander leaves, chopped, धनिया पत्ता
    Salt to taste, नमक स्वादानुसार
    1 tbsp Mustard oil, सरसों का तेल
    1 tbsp Pickle masala, अचार का मसाला
    For Choka
    1 Eggplant, roast, बैंगन
    2-4 Garlic cloves, लहसुन
    4 medium Tomato, roast, टमाटर
    2 medium Potato, roast, आलू
    ½ inch Ginger, chopped, अदरक
    2-3 Garlic cloves, chopped, लहसुन
    2 Green chilli, chopped, हरी मिर्च
    1 tbsp Coriander leaves, chopped, धनिया पत्ता
    Salt to taste, नमक स्वादानुसार
    1 ½ tbsp Mustard oil, सरसों का तेल
    Other Ingredients
    1 cup Ghee, घी
    For Garnish
    Coriander leaves, धनिया पत्ता
    Process
    For Dough
    In a parat, add whole wheat flour, broken wheat, salt to taste and water, knead a smooth soft dough.
    Apply some oil and knead it properly once again.
    Cover it with damp cloth and keep it aside for future use.
    For Stuffing
    In a parat, add sattu, onion, green chilli, ginger, garlic, green chilli, salt to taste, mustard oil and pickle masala.
    Mix everything well. Keep aside for future use.
    For Stuffing & shaping Litti
    Now, make small or medium sized balls from the dough.
    Sprinkling some flour, roll each dough ball to a circle of about 5 to 6 inches.
    Place a big spoonful of the stuffing in the center.
    Pleat and then join the edges. Press the joined part and lightly roll the stuffed dough balls in your palms, so as to get a round shape. Keep aside.
    Another method is to flatten the dough ball with your palms and make a shallow cup.
    Now, add the stuffing and roll it in a round shape.
    Keep the prepared littis under a cotton towel or napkin, so that the dough does not dry out.
    Onces the cow dung cake is semi hot, place the prepared litti in them and let them roast until cooked through and through.
    Remove on a cloth and dust of the cow dung cake dust off it.
    Then soaked the warm littis in ghee for 5 minutes and served with prepared choka.
    For Choka
    Take the eggplant, add 2- 3 slit and place a clove of garlic in each one.
    Now place the eggplant, tomatoes, potatoes on burning hot cow dung cakes and roast them until soft and cooked properly.
    Remove and let it cool down a little then peele the veggies and chop them roughly.
    Add them in a bowl and add chopped coriander leaves, ginger, garlic, green chilli, salt to taste, mustard oil and mix everything properly with hand or masher. Choka is ready to serve.
    Note
    Use coarse flour.
    Add roasted potato to add thickness in the choka
    Use cow dung cakes whenever possible or add 1 tsp baking soda in the dough if cooking in the oven.
    Use pickles of good quality and taste.
    Use a good quantity of ghee for soaking litti.

      I missed my father so badly after watching this and got emotional too. Every damn thing that chef did was the same how my Father used to make it. Unfortunately he's not among us. Will make it soon.

    Didn't expect so much authenticity in little chokha from a Punjabi guy. Traditional style of litte making on upla, garlic inside 🍆 while baking, use of musturd oil in chocka. I can say 99% authentic litti chokha(deducted 1% because of the way sir prepared litti on upla, but that's ok, can understand preparing in complete traditional style is not so easy in today's city life). Hat's off to you sir.

    I had litti chokha daily during my colg days from a small boy who used to sell it outside our campus...2 littis, chokha,achaar, pyaaz n upar se bhar ke ghee. When I was enjoying this everyday my friends had my tiffin...those were the good old days.. Now I make litti chokha n I make it damn good..yeah main nahi..bihari dost bolte hain...proud to be a Littikhor ❤️

    i have never thought that a cooking video can left me teary eyes, but this video did. Sir ranveer have taken a most authentic recipe from the roots of bihar and shown it to the millions of indians. Till some years ago , this food was stereotyped as the meal of poor class people in most of the other part of the country , but is now part of the live counter of the most of the indian wedding functions in north india. For all of us biharis , it will always be that comfort food which we devoured in the winter days while sitting around the "borsi", along with our family,

    I'm a Bihari and I must say out of all the recipes of litti chokha I've seen on internet this is exactly what is cooked in my home or to say in a traditional Bihari home. Garlic in the 🍆 that's what I was really hoping and it was there. Really chef You represent India in a wholesome manner.

      In Bihar we call this litti chokha and in some part of UP like vanaras it is popular as baati chokha so basically only name of this dish changes through region but love and taste remain same.

    I m a bengali who was born and brought up in eastern UP.. There was a huge bihari culture influence in that part of UP.. I had and will always love litti choka specially apni maa k hath ka.. I m in delhi aur aj v acchi litti choke k talash me rehti hun yahan

    Litti chokha eastern UP me bhi bahut famous hai. Ranveer has used exactly the same method to prepare litti chokha which I saw during my childhood. Sumptuous is the word for it :)

    I've watched every single episode of Raja Rasoi...Love all your recipes. Have never seen a chef creating magic with ingredients like you. Whenever I'm in the need of a recipe your channel is the first I turn to. Love and blessings from me and my family ❤️ The litti chokha was awesome. College ke din yaad aa gaye. Brought in some nostalgia too.
