West Bengal is a state in the eastern part of India and the people living there are known as Bengalis. Bengalis love eating fish and fish curry is something that is included in the daily diet of a Bengali. Doi Maach (doi is yogurt/curd and match is fish) is popularly made at weddings or during festival time or during special occasions or when guests come over. It is even made on usual days if some one wants a change from a daily fish curry. Please do try this easy recipe and send me your feedback.
Ingredients required for making doi maach -
* 578 gm/1.3 lb fish. Usually fresh water fish like Rohu/Catla is used. I have used salmon. Any firm fish like pomfret/halibut/tilapia can also be used. Usually bone in skin on fish is used but I used boneless, skinless salmon fillets. Use any fish available at your fish, it needs to be a firm fish that will hold on to its shape in the gravy.
* 200 gm/ 1 very large onion
* 23 gm ginger
* 11 gm/ 3 large garlic cloves
* 1 fresh green chilli (optional)
* 20 gm/2 tablespoons cashew nuts
* 110 gm/ 4 heaped tablespoons plain unflavored yogurt(curd)
* 1 teaspoon Kashmiri red chilli powder
* 1 teaspoon ground cumin (jeera powder)
* 1 teaspoon ground coriander (dhania powder)
* 1/2 teaspoon garam masala powder. I used Bengali garam masala powder
• HOW TO MAKE BENGALI GA...
* 3 green cardamoms
* 3 cloves
* 2 inch long cinnamon stick
* 1 teaspoon salt
* 1 teaspoon sugar
* 5 tablespoons oil. I used sunflower oil
* brown onions and chopped coriander leaves (cilantro) for garnish (totally optional)
For marinating fish -
* 1/4 th teaspoon salt
* 1/4 th teaspoon turmeric powder
* 1 teaspoon oil
Serve this with white rice or Bengali sweet pulao/Bengali Style Vegetable Pulao (recipe links given below)

Tried this with Pollock - worked very well. You've made cooking Indian food fun again!
When I started cooking, back in the 1970s, about all you could find in UK shops was 'Vencatachellum' powder (made by Sharwoods, heavy on the Fenugreek). But I soon bought a cookbook by Dharamjit Singh, which - together with an Indian shop in the nearby town - expanded my horizons. The difference is that, in his case, there was an almost reverential attitude towards the food: you treat the ingredients more like friends. I much prefer that!

I noticed that you finish most of your dishes either with fresh cilantro leaves or sprinkle of garam masala or crushed dried fenugreek leaves.
Is there a rule which of these herbs/spices go to which particular dishes? 🤔 Because I’ve never seen you put all 3 of the above as the finishing touch
Garam masala powder goes in most of the dishes with a few exceptions. I like using kasuri methi more in meat/tofu/paneer/bean dishes.
You don't talk to much. You're very helpful. I add yogurt to a potato and egg curry. It's important to be careful with the yogurt. Thank you dear.

Can we use candlenuts if we don't have cashsew nuts?
I do not know about candlenuts but you can also use peanuts instead of cashewnuts

At @1:36, it looks like you used red chili powder although you said turmeric?
Sorry but I cannot understand what you are referring to. I used turmeric only when I applied it on fish. Other than that turmeric powder is not used in this recipe

I notice that this is one of the few recipes without tomato's. I always cook Asian food in a wok made of carbon steel for years, I would like to go for curries, but unfortunately its not good cooking tomato's s in a carbon steel pan. I wonder if there are more curries without tomato's s but I can' t find them easily. And does the curry change dramaticly if you leave them out?
You can use any heavy bottomed pot with raised sides for making curries.

So many masala are not used in doi mach, lal mirchi and dhaniya isn't used.
I didn’t use so many masalas, but used the minimum amounts of the basic spice powders. Regarding coriander leaves, I said it is totally optional .
This dish looks really delicious. But one small suggestion I have heard that eating fish with yogurt causes skin rashes and allergic .so do not combine this both 😊
Sorry but I disagree on this point. I am from West Bengal and Bengalis do add yogurt in many of their fish dishes. kalia, bhapa fish and many many others. Please do not use it if you have any concerns but there is no proven scientific evidence that these two combinations should be avoided. Yes it should not be taken by anybody having dairy allergies.
Then don't make it. Others appreciate it and love the recipe.
