Yes, when cooking in a kitchen or anywhere where the food is going to be eaten, I'm meticulous about food safety and sanitation. When cooking on TV where nobody, including me, is going to eat the food, I sacrifice health code for speed. BTW...that shark was fresh and sampled some of it raw as well. I'm much more afraid of cross contamination with poultry, pork and red meats. I'm guessing that flukes and IBM don't eat sashimi or ceviche. Now...bring on the "set an example" replies.
The cook is cross contaminating everything! Touching raw fish then everything else including olive oil container! This is just unprofessional and very bad! Bacteria will multiple on touched surfaces!
