VEG BIRYANI! How to make Vegetable biryani | Vegetarian Biryani | Food with Chetna

  • This is a great crowd pleaser recipe, whether it is the weekend or a special occasion, which is why I have chosen it for my Diwali main meal. It is a easy and simple recipe and tastes amazing!
    Ingredients
    6-8 tbsp sunflower oil
    5 medium sized onions, thinly sliced
    For the vegetables
    2 bay leaves
    1 stick cinnamon
    2 star anise
    5 cloves
    5 cardamom pods
    1 tsp cumin seeds
    2 medium sized onions, finely chopped
    2 cloves garlic, grated
    1 cm ginger, grated
    2 tomatoes, finely chopped
    1 tsp salt
    1 tsp chilli powder
    1 tsp turmeric powder
    1 tsp garam masala
    1 tsp ground cumin
    1 tsp chaat masala
    1/2 tsp sugar
    1 small cauliflower, roughly 400 gms, cut into florets
    200 gms fine beans, cut into half
    1 carrot, roughly chopped
    2 potatoes, cut into 1 inch pieces
    100 ml water
    For the rice
    Pan full of boiling water
    1 bay leaf
    1 stick cinnamon
    4 cardamom pods
    8 black peppercorns
    400 gms basmati rice
    To layer
    2 tbsp milk
    pinch of saffron
    1 tsp rose water
    handful of fresh coriander leaves, finely chopped
    handful of fresh mint leaves, finely chopped

    Biryani is my favourite Indian meal....the best thing about this is that it looks very flexable with regards to the vegetables

    Chetna! I just put my first - this your veggie Biryani in the oven! My kitchen looks like a disaster. What a lot of work! Can't wait to taste. Everyone came home from work and said - WOW! It smells so good in here. . . . .. I will let you know the results! Wow!!! So amazing. The fragrance is so divine and I think it is the most delicious dish I've ever tasted!

    I cooked this tonight and it was absolutely delicious. Fed all six of us with enough left over for 2 lunches tomorrow. I didn’t have rose water or saffron, but I’ll get some for next time, although I it was good enough without.

    I made this for my family Christmas dinner and it turned out perfectly. It was a bit of work, and required some good timing to make sure the rice and vegetables were pre-cooked just the right amount, but the end result was spectacular. I will certainly make it again.

    I'm going to try this Chetna! A little late for Diwali but who cares? It looks like the magic comes from the sprinkle of rosewater and saffron-infused milk. Very grateful for this flavor-rich, colorful riff on tradition.

    That's a bonus recipe for Diwali..
    I do it the similar way but I also add curd/cream and little lemon juice to the veggies and cook fr a min, just before layering with rice. It'll taste exactly like hyd dum biryani.

    Looks fantastic! Do you crack the cardamom pods to release the flavor, or do you leave them intact? Also, that pot is fabulous.

      Don't crush cardamoms...just press them gently under the flat surface of knife ...few cracks in cardamom is go to go for any recipe

    Wow I'm so happy I came across your channel.. I have mixed raced children and my family has also Indian.. Jamaican.. Swedish and Israeli.. So as you can see its a big mix of cultures BUT we always seem to cook lots of rice dishes that my late uncle Tarun cooked for us.. We just love all this food and the fact that you do cook lots of vegan too (as I'm vegan) is fantastic. Thankyou for sharing your wonderful recipes. Namaste. X

    I could actually close my eyes and smell it through the computer screen! I am vegetarian and I live alone; can you provide this recipe in reduced amounts so that I can duplicate it? I don't have anyone with whom to share it, but I would love to treat myself to what appears to be a dream dish!

      Perhaps you could just halve the amounts and freeze some or simply enjoy it for a couple of subsequent meals. There is no need to worry about being exact as Chetna has presented a very strong recipe in this biryani and the quantities she uses are approximate anyway. If you just follow more or less what Chetna has done it should turn out delicious.

    I'm embarrassed to say this, but as much as I love Indian cuisine, I've never eaten biryani. I guess I tend to stick with my favorites. It is definitely at the top of my list to try after watching this!
