I put each in a container and shook it to achieve the torn texture. I had it with some curried chickpeas and potato.

Yes you are correct, in India they use a different flour too to make roti which is whole wheat or Atta flour. The Indian rotis are not as soft and puffy as the West Indian Rotis, they are more flat and stretchy. they also do not stay soft for long as ours do. The use of baking powder in our rotis is meant to make them stay softer than the Indian rotis and in order to be thick, soft and leafy as in the case of our Oil Roti, ( even when reheated ) baking powder is needed. The Indian roti ( Chappati ) is never as soft as ours is, also Indian rotis are thin and will not stay soft for long because of the lack of baking powder.

It will stay soft for approx. 1 day , the best way to maximize that time is to keep it in an airtight container. Once it is put in the fridge though, regardless of how long, when reheated, becomes soft as if just cooked.
I always wet a paper towel and wrap the roti before heating it, you can also use parchment paper just wet your hand and rub it on the paper to damp it a bit I wet the paper after wrapping the roti in it the bounty I wet before wrapping roti and heat it in intervals from freezer 30 seconds at a time hope this helps

For 4 rotis you will need 1 pound flour and 1/8 tsp. ( half of a quarter teaspoon ) of baking powder. The reason for the flour after the oil is to help the layers of the roti to seperate after cooking.
Firstly I’ve never seen roti so soft! What a great video! But I want to note some things that are confusing to me and what I have questions on. I too am trying to perfect my roti: 1. You’re using 4 cups of flour but it’s measured in a Pyrex meant for fluids. Do you mean 4 fluid cups of flour or 4 dry cups of flour? 2. The cooking portion of the video doesn’t seem edited. You note after 1 minute the roti is flipped but the time stamps show it’s flipped after 20 seconds (10:13 to 10:34). On medium heat, wouldn’t 1 minute be too long? Please clarify. I think it would be helpful to know the total time the roti is on the stove for. Thanks so much.
First of all thank you for noticing this is the softest roti out here on the internet to date. The difference in dry and liquid measuring cups for flour is not much to make a difference in this recipe. In certain baking recipes it does but not for this one. if we had used dry measuring cups the baking powder amount would be the same. It was 1 minute for the first side, the video was edited. on high heat it will be around 30- 45 secs and on med 45- 1m approximately. It is good the check before turning too. The timing is just a guide, temperatures are not exactly the same on every stove.
Real Nice Guyana I like when roti browns a bit but I might be cooking it on a high heat and that causes it to dry out a bit. It’s still soft but not as soft as it could be. I’ll try a lower heat next time. Thanks for your response!
Remember to clap the roti when it's hot. My mother used to clap roti like dis and when I give this recipe a try, I will do the same ting. I don't care if it's too hot.
Salt is not added to this because it is always eaten with curries and stews etc which is cooked with salt. This needs to be neutral so it can be paired with everything.

Good question, the reason is that these rotis always goes with currys or stews or Dhal which already has salt.

Just make the rotis as usual, let it cool off and freeze in a ziplock bag. Once reheated it will be soft as when it was just cooked.
