It's actually from Austria, but I was kind of raised with it in the south of Germany and I love it! ;)
PS: at first I thought, what the hell you wanna do with the apples until I realized, that it was for the *Apfelmus* going alongside with the dish.
And btw., raisins (to me!) are an absolute necessity in a real Kaiserschmarrn. :))

And I knew immediately it was Kaiserschmarrn, when I saw you eating in the beginning. I think you are a younger (and male) version of "me" .... not long ago you mentioned all the cakes you love, which I also love, and I hate to admit it, I think I am also addicted to Kaiserschmarrn (and Le Creuset). My sister loves it too, except she doesn't like the raisins (I do), so when I visit her I usually make two batches, one for her, one for me. But I have to give credit where credit is due: You do it the right way, whipping the egg whites first (I am lazy, I don't separate them - but the way you do it it exactly how it is done and it makes it a lot fluffier). And very impressive you even made the apples from scratch! You are killing it! Respect!
Have you ever tried adding a small amount of lemon juice and a dash of cinnamon to the apples? Sometimes I like to roast a few almond slices (Mandelblättchen) and sprinkle them on top (a bit reminiscent of the Bienenstich), I like it a lot.
On a different note, I think the Austrians invented Kaiserschmarrn, but it has become so German over time, that I will just say Thank you to our Austrian neighbors, they really do have wonderful food and we Germans like to "adopt" it 😉

Juss...Kaiserschmarrn is not german, its austrian, but yes its popular in all central Europe (Austria, Germany and Czech lands)
Austria and parts of Bavaria do not only share a border but a long history, also culinary traditions. Kaiserschmarrn, Pfannkuchen, Dampfnudeln and many other Mehlspeisen is what I, my mother, my grandmother and so on grew up with in Southern Bavaria. You are right when you refer to Salzburger Nocken, we don't have these.

Oh yes, I fully understand your addiction. In fact, this is an Austrian dessert, but we haven't been that far away so that we can't savor it. The dessert was first served to the Austrian Empress Elisabeth in 1854. The dessert is said to have accidentally torn when serving, which later became a special feature. Only then was the dessert “redesignated” by Emperor Franz Joseph I and called Kaiserschmarrn. The Austrian cuisine is very good at desserts and cakes. Maybe they can also delight you with "Topfennockerln" (Curd dumplings), especially with "Pflaumenjus/-kompott" (plum jus/compote) or "Hollerkompott" (elderberries compote). Tss, because everyone can do strawberries. ;)
And since you also have an apple tree, you can also make baked apples with a filling of almonds and/or raisins and a cinnamon seasoning.
Everything is for "den süßen Zahn" (the sweet tooth), a slang for lovers of desserts and sweets.

Funny thing about raisins is that i like them solitary but hate them when they are used in something else. I also have the same issue with pistachios.
lol at looking at the aples,.. i was SURE *aaah aple-pie!!*... good turn > Pro Tip:* _Try out_ *Griesschnitten,* fried slowly in the pan with butter, after cooking the *Gries* in Milk with Vanilla and letting it cool down, then form it with hands into a long quarter, so you get 4 sides to lay down in the pan and turn it when brown, after that, you simple turned each of them in a plate with a mix of sugar & cinamon.
You can eat it with Vanilla sauce or like here with *cold* Apfelmuss,... you will die for it ;)

Usually you can unlock the door latch on all German doors, so that you cannot lock yourself out.

You should install an electronic code lock at your front door.
A code lock is rather easy to unlock after a while, once you can see the numbers most used, it’s useless. Unless it changes the order of the numbers with every single use.
I have seen a PIN-entering display like that once and loved it.
@@jennyh4025 sure - you can use a touch panel - or you simply change your codes from time to time. And if you use it only in case of emergency (if you forgot your keys) it’s no visible which keys you press. And there are always a lot of number combinations.

Love Kaiserschmarrn though we don't get much of it in Northern Germany. I had my first Kaiserschmarrn in Austria. And my Croatian neighbor did an excellent one. 👌 Northwest Croatia actually shares some of that Austrian cuisine.

Put the sugar in the pan first to allow it to caramelise (?) before putting thin slices of pear on top of it. Then pour on the batter.
