I think you might love this modpack called TerraFirmaGreg because it has the exact system for constructing the dugout canoe that you described, much of that modpack is realistic to a fault I love it.
Ancient and historical peoples were just as smart and clever as people are today, just with a different tool box and set of technologies. Thanks for the comment and putting it so well!
