Vicky, I don’t care what you are cooking (actually I do), you are a joy to watch. You are funny, enthusiastic and lovely. You are destined to be a star! Don’t forget the whipped cream on top
I’m a 77 year old South Carolina woman. I have eaten banana pudding since I was Archie’s age and love it. My mother and grandmother always made it for me. They cooked the vanilla custard, used the same layering process that you used and topped it with meringue and browned in the oven. We had warm banana pudding the first day and cold after that because it doesn’t reheat well. Yours looks delicious.
I'm 57 and use the same recipe. I even smash up a few of the cookies to put in the pudding along the the vanilla extract. Then yes I finish it off in the oven and sprinkle a cookie on top for decoration. My mom used to that.
A Carolina woman here, a banana slice per "biscuit" to begin, then top with extras (banana slices or "biscuits" or crushed "biscuits"). Warm homemade vanilla custard pored over the layers and settling down between until it all merges in taste. My mother put meringue on top that was browned in the oven. We have pot pies, fried fruit or berry pies, burritos., of course, meat sandwiches.
Not exactly the way it's made in the US but it doesn't have to be as long as you like it, that's all that matters. It really needs a layer of whipped cream.
That certainly looks nice. If I could offer a suggestion that would take your pudding from delicious to addictive, make the pudding from scratch. It’s a basic vanilla custard - milk, sugar, eggs, vanilla, and butter. In the South, experienced cooks, such as yourself, don’t use a package for this dessert. Instant puddings taste like water, while homemade custards are rich and satisfying. Banana pudding is my grown son’s favorite dessert of all time.
We love banana pudding! I make it from scratch with custard/pudding cooked on the stove layered with Nilla wafers and topped with meringue you lightly brown in the oven. Very old fashioned dessert getting lost in modern day convenience. Custard 3 egg yolks + 1 whole egg 1/2 cup sugar 3 tablespoons all-purpose flour 1/2 teaspoon salt 2 cups whole milk 1/2 teaspoon vanilla extract 30-40 Nilla wafers 3-4 medium bananas, sliced Meringue 3 egg whites pinch of salt ¼ cup sugar In a heavy sauce pan/Dutch oven, whisk egg yolks and whole egg, sugar, flour salt. Stir in milk. Cook uncovered over medium heat, stirring often until mixture thickens, about 10 minutes. Remove from heat and stir in vanilla. Meringue Beat egg whites a salt until stiff. Gradually add sugar until meringue is stiff peaks and doesn’t slide when bowl is tilted. Heat oven to 425. Assembly: Spoon a thin layer of custard into 1 1/2 to 2 qt casserole dish. Place wafers on pudding and add banana slices to top of wafers. Repeat layers using about 1/3 of remaking custard for each layer and end with custard. Top with meringue making decorative peaks. Be sure to go to each edge. Bake just until meringue is golden (less than five minutes. I think you would really like the homemade version! All the best from Kentucky
The best banana pudding is made with homemade custard and put it on the wafers and bananas while warm. It's so much better than pudding mix. I can always taste the difference when restaurants use the packaged stuff.
As you probably figured out, there's two different ways to make banana put in. One is cooked in. One isn't. Both of them are delicious and what you've done is wonderful. Good job
Your banana pudding looks beautiful! The only thing I would change would be to only have one layer of vanilla wafers on the bottom instead of putting them atop one another. The reason for the single layer is so that the pudding coats each wafer, which softens the wafers as the dessert rests in the refrigerator. There's nothing wrong with using instant pudding mix if that's what you have available. You can also fold in some whipped cream, sour cream, sweetened condensed milk, or a combination of those into the pudding to increase the creaminess and flavor.
I was born and raised in Arizona. 43 years old, widow, I have an 11 year old son. I love banana pudding, vicki. ❤ love that you are cooking and helping the UA-cam channel by making cooking videos.
Vicky, that looks great! I'm from Michigan. You mentioned pasties, Cornish immigrants came to Michigan to work the mines in the U.P. (Upper Peninsula) and brought their pasties with them. They are a staple here in Michigan, but we added a Yooper flair, by adding rutabaga. May 24 is the Michigan's Pasty Day.
Watching from Pensacola, Florida but originally from Birmingham Alabama. Banana pudding is a staple here in the south but most southerners cook it and have merengue on top with a homemade custard pudding. Anyway, it's a great dish 😋
Hello, Archie! Hello, Miss Vicki! REAL banana pudding is fantastic. Unfortunately, many people have only tried the stuff people get out of a Jello Pudding pouch. You need to get a recipe for the real thing. It requires that you COOK a pudding (you may call it a custard) from scratch. Milk, sugar, egg yolks, cornstarch, vanilla, butter, and a bit of salt. You REALLY need a Southern Living cookbook.
As an Old Southern Scratch cook-The American Test Kitchen Cookbooks are a Great source, especially for those who haven’t been taught how to cook, or want to venture out of their comfort zone!!! They’re my go to Graduation & Wedding gifts, & now they have a huge book of all seasons, which is Awesome!!!
My mom and her sisters from Tennessee always made banana pudding with cooked Jello pudding and it was delicious with lots of meringue on top. I have had made from scratch versions that weren't as good.
Chefs would be proud that you mother took the time to also make the dish look pretty, as well as taste good. 9:40 Fan of the channel for 3 years now, from Washington state. Interesting story about James' grandfather not having bananas. Miners, in WWII, were upset when banana supplies dried up. They loved to eat them because they could eat them w/out washing their hands.
Oh my, bless your heart Miss Vicky, you have stumbled into a minefield of culinary controversy. Whole regions of the country debate the merits of the best banana pudding. Oven or icebox, there is warm banana pudding with meringue, cold banana pudding with Cool whip or with real cream. I don't know where you got your recipe, but it needs whipped cream or meringue if served warm.
Hello from Northeast Ohio! Just a couple miles from Lake Erie. Your pudding is fantastic. I’m 58, my Mom and Grandma always made it since I was a child. I love banana pudding. I have never added the second step to the vanilla pudding. Maybe a teaspoon vanilla, that’s it. I will say how I stack up mine, I get everything ready but the instant pudding. Single layer of the wafer cookies on bottom and sides. Then precut 2 bananas, I split long ways, then cut into slices, put aside in bowl. Make instant vanilla pudding stir in half the bananas. Pour onto wafer cookies. Add a single layer of wafer cookies, make instant banana pudding, mix in the rest of the banana chunks, stir in and pour. Add another layer of wafer cookies to the sides and top. Top with whip cream. Top with a couple of cookies standing upright in the whip cream. Put in fridge to chill. It helps to soften up the cookies and soak in the flavor to let it rest for a couple hours. Usually made early in the day and ate after dinner. I myself don’t like cooked pudding. My grandma would make it that way and I was never fond of what was referred to as the pudding skin. It always seemed rubbery. I am sorry to hear about your father, Vicki. My mother is turning 84 and has Dementia. It’s not an easy thing to live with for them or us.
North Carolina here! I grew up eating banana pudding! I love the old fashioned custard kind the best but my mom always made the jello instant pudding kind with cool whip and sour cream. She got the recipe from her church’s cookbook. Glorified Banana Pudding. Yours looked delicious and I loved the presentation .
It looks great. My only suggestion is that if you use that dish, which is lovely, you might want to use two batches of pudding so those layers are a little thicker.
Watching from Kansas. Banana pudding is best with the cooked pudding/custard mix rather than the instant mix. You can even use Birds if you have it. The bananas need to be layered throughout the custard/pudding, on the bottom and around the sides with the biscuits. The banana on top is just for decoration.
Vickie, I Make my own pudding for banana pudding. 1/2 cup sugar,, 2 eggs, and 3 Tablespoons of self rising flour, (I mix flour and sugar together first, to reduce clumps), 2 cups of whole milk. Mix together....heat on stoe, until it starts thickneing...then add 1 tsp of vanilla flavoring... then pour thickened pudding over the layered banans and wafers.
Your banana pudding looks delicious. Try topping your dish with whipped full cream until it is fluffy like a cloud. While you are whipping the cream add a tablespoon of powder sugar. Arkansa, USA
Hello Vickie , from West Virginia Appalachia 👋 I like meat veggies fruit & sweets 😂 That banana pudding looked delicious ! BANANA FOSTER is another delicious banana desert and one of my favorites to make and eat . HELLO 👋 KIDS Glad you enjoyed your banana pudding . ❤❤❤❤❤
Real banana pudding with a warm cooked custard/pudding and topped with a toasted meringue is just divine. Your banana pudding trifle is good also. Because it is cold it is great for a family reunion. I have made this often and it gets gone quickly. You can sprinkle with a little sweetened coconut for a texture contrast.
when i was young my mother always made the custard from scratch with the meringue on top served warm but as i got older she switched to the Easy Banana Pudding with the filling made from the instant pudding mix/cool whip/sour cream and this one should be served chilled and that one became my job to assembled it
My mother made banana pudding by making the custard from scratch. I make it with vanilla or banana instant pudding. My mom would sometimes put a meringue topping.
Vickie, my favorite Banana Pudding is the famous Magnolia Bakery recipe, it uses Bananas, sweet condensed milk, Jello Pudding, heavy cream whipped to soft peaks and Nilla wafers it's the best version I've found. Easy to follow recipe on UA-cam, Yum! I'm watching from PA
This has been a favorite since childhood, and it's quite addicting! Can't go wrong adding some extra banana to it either! Love watching these cooking videos! I live in a tiny coastal town called Ocean Shores in Washington state, USA. We get quite a lot of storms this time of year too with strong winds, so I know how it goes with hunkering down at home while one passes. Hope the furniture wasn't blown away!
whenever making a trifle like dessert make sure the recipe doesn't get crossed up with shepherd's pie (Friends reference). You do great Miss Vickie, always a pleasure to see you cook.
Mississippi, USA, here. If you are stuck in the house due to bad weather and don't have instant vanilla pudding mix, whip up some vanilla custard and let it cool.
Hi! Watching from Atlanta GA but I’m originally from Chicago. Love watching the cooking and everything else on the channel. Pudding looks delicious and man Archie is growing so much.
We have pasties in the U.S., in northern Michigan, where Cornishmen came generations ago to work in the copper mines there. I'm originally from Michigan, currently living in eastern Nebraska.
Being in the catering business for a decade, I made multiple banana puddings. I generally put in either banana or vanilla extract as well as whip cream in mine
I’m watching from Tucson, AZ 🌵☀️ Wnen you were talking about your Dad and first having a banana, reminded me of a newspaper clipping from 1914, I found, where my Aunt’s Christmas List was published. In it, she asked Santa for an orange, a coconut and a scarf. According to my Dad, the towns of central Illinois never saw oranges except for Christmas and nobody had ever seen a coconut in the flesh before. This was during WW1.
A variation of this that I really like is to stir in some whipped cream and sour cream into the vanilla pudding. It makes it lighter and the sour cream adds just a bit of a zing to it, though you don't actually taste the sourness. You can also spread a layer of whipped cream over the top, then scatter some crumbs from the vanilla wafers over the top. Even if we don't add the whipped cream layer on top, we always have some whipped cream on the side that people can add to taste. And since we make it no bake, we let it set up until chilled, preferably overnight. It's usually better the second day lol.
One thing to try, I cover my bananas in honey while prepping everything else. Adds sweetness and keeps them from turning black. Though it usually doesn't stay around more than a day.
Well done! Another American classic to add to your repertoire! Greetings from Illinois about 40 miles north of Chicago. My gg grandparents were from the Isle of Man. Another beautiful island. I visited there many years ago.
I've been making this since mid 60s in High School up here in Washington State and still do. Besides layering both I also 1/4 each round and mix in pudding mix for more banana taste but use 2xs the pudding mix. The recipe I used long ago said banana pudding nothing about southern.
@@WillardWooten if you Google it, there are several, and in fact some do say "southern" banana pudding. I take it you never had it the "southern" way, maybe some day you might try it...bless your heart.
@TubE-tr8yi Sorry growing up we didn't have Google . Back in 60s things are different, their were no labels until the Internet. If I use a recipe it's from the many cook books I have , I'm old school at 72.
I'm 63 today & I live in North Carolina about 1& a half or 2 hours away from the beach & about 3 or 4 hrs from our mountains. You did a great job as always & so glad you like it. Being from the south we love our special dishes. My mom always made them & I make it every now & then. I use the regular recipe on the back of the vanilla wafer cookie box & we have pre made whip cream called Cool Whip but we have different powdered whip cream or we can make homemade like u did but cool whip is so easy & tastes really good so I always use it. I always think the more the bananas the better so I was glad to see u use alot of bananas. 😍🍌💛
In the US, we have 2 kinds of pudding mixes, one is the cold version, like you made, and the other version is a stove top cooked pudding, which is probably the original version. I'm old school, so i prefer the cooked version, in reality, they are probably very similar. It is hard to beat banana pudding, as a quick and great dessert.
Would love to see you have your own channel, one day!! You add so much value to this channel!! It would be so much fun to see your husband bring the catch in and you cook something fresh from the boat! Food Network might give you a cooking show!
Look delicious! Like all things there are different variations. Some people put whipped cream on top, others put meringue and brown in oven. My families preferred topping is marshmallows also browned in the oven. All are so good.
I get the whole all from scratch concept. And it is good, but quicker is better when you don’t have time to do it all scratch. My go to for it is, yes the box pudding, but as soon as it is set up, I fold in heavy cool whip to make it lighter and fluffy. Then layer everything in singular layers. One layer of cookies, one layer of pudding, one layer of bananas, then pudding, cookies, pudding and bananas until the dish is full. ALWAYS let it sit over night in the fridge to make the cookies softer and the flavors meld together. Everyone I have made it for love it and it goes faster than other desserts.
We call the wafers over here in the States Nilla Wafers. Also, you can put whipped topping on top for a extra touch. Banana Pudding is definitely a southern dish. I grew up on it. Btw I was born and grew up in Texas, but now live in Arizona. Vicky keep up the good work. Also, we call sausage rolls here, in the states kolaches.
This is a great fun dish to be making on a day like that. It came out beautifully. I rather like stormy weather as long as there is no damage to anything. I would love to have some of that pudding. Your grandmother's dish is pretty and perfect for serving this in. I love to have those vanilla wafers with a glass of milk as well, they would be great with tea 🙂
Looks delicious! In the future, you might want to use more of the pudding (what you guys call custard, I think) throughout and on top. Love the vanilla wafers, too.
Hi there, I'm watching from Baltimore Maryland. It's a cold drizzly evening here but I just brought home a small Christmas tree to decorate while staying cozy with some hot cocoa this evening. 🎄
We always used to do the cook and serve vanilla pudding and put it on the bananas and wafers while warm. It would really make the banana flavor come out. I love it warm and my mom used to make a meringue for the top and toast it. My favorite dessert
Ms. Vickie, absolutely wonderful job!!! I am always looking forward to what you will fix next. I hope the storm passes quickly and you are OK. Take care and God bless. Love ❤️ from Texas.
I used to think that about pistachio cake. I had given the recipe to a coworker and thought there’s no way anyone can mess this up. I was wrong. She messed it up. It is a very simple cake. You use boxed cake mix, but her cake tasted terrible. I don’t know what she did to it, but it was not good. It must’ve been the brand she used to make the difference. I always tell people specifically to use Duncan hines cake mix.
The funny thing is when I got the notification that this video came out, I was in New York City and I was going to get some banana pudding at Magnolia Bakery, a place famous for their banana pudding. It's really good to eat.
I prefer the cook and serve pudding. It softens the waffers. Pouring it in gets everything covered and blends the flavors better. Then add mirage for a topper then torched.
Miss Vicki is such a delightful lady so glad we get to watch her cook.
She's great!❤😊

According to my Dad, the towns of central Illinois never saw oranges except for Christmas and nobody had ever seen a coconut in the flesh before. This was during WW1.
From Ohio, the Buckeye state ! Another great job, Vicky ! I ❤LOVE banana pudding, and yours looks delicious !
Hello from Florida’s Space Coast. Love your channel😊
Watching in Edmond, Oklahoma. Banana pudding is a must at any social event. The container is scraped clean each time .
To marry vanilla waffles.
Those aren’t biscuits nor are they cookies; they are called WAFERS.
Happy birthday
I'm from Dayton, Ohio, which is in the Midwest. Ohio was the first U.S. territory to become a state (in 1803) that had never been a British colony.
Love your stories, as well!!
Look delicious! Like all things there are different variations. Some people put whipped cream on top, others put meringue and brown in oven. My families preferred topping is marshmallows also browned in the oven. All are so good.
Much love Mrs. Vickie from south Florida. Hope everyone is safe and well despite the winds ❤ 🇺🇸
From Missouri love watching your cooking videos you do such a wonderful job you make cooking fun have a great day and God bless you and your family
Southern Illinois U.S.A. here, having 60degree weather, unusual for us this time of year. Enjoy watching you channel, Your banana pudding looks great.
Love the family stories. Another great video!
I'm watching you from SW Wyoming. You've done a great job making the banana pudding. It really is so delicious. My sons & grandkidddos love it.
Hey Vicki! If your bananas turn brown, you can dip the slices in lemon juice to keep them from turning! Absolutely love you guys and your videos.
This is awesome we love your cooking segment Vicky keep going
We call the wafers over here in the States Nilla Wafers. Also, you can put whipped topping on top for a extra touch. Banana Pudding is definitely a southern dish. I grew up on it. Btw I was born and grew up in Texas, but now live in Arizona. Vicky keep up the good work. Also, we call sausage rolls here, in the states kolaches.
Or vanilla wafers. Nilla Wafers is actually a specific brand.
I am watching from Florence, SC... It looks yummy!!!
I'm from Greenwood, and it does look nice.
Watching from Southern California. ❤🇺🇲
Hi there, I'm watching from Baltimore Maryland. It's a cold drizzly evening here but I just brought home a small Christmas tree to decorate while staying cozy with some hot cocoa this evening. 🎄
Hello from Arizona. Love your gram's dish. ❤
Greetings from Michigan, USA. Looks like a beautiful banana pudding.
Holland, MI here. 👋
@Love_N_Let_Live Eau Claire, Mi.
You did a wonderful job; It looks delicious and so pretty! you are so personable and a natural! Thank you from Pennsylvania,
Watching from Hawaii via Missouri! ALOHA! 🌺🌺🌺
Hard to go wrong with this one. Always good for everyone.
