I believe skin is burned and cleaned nicely cause the skin looks yellowish after burning. Why it’s important is that burning the skin while dressing up the meat gives that smoky smell and better taste. And believe me for those who do not eat pork skin, its the most important and best part. And also if the skin is not burned it looks white does not feel or look clean or appealing to eat.

Not a bad recipe,but Chinese onion doesn't go hand in hand with fresh pork meat,i prefer using them over smoke pork! ✌️
