    The dipping sauce is called tempoyak. Its fermented durian. You are right Dan. The sauces on the nasi kerabu are sambal and "budu"(a Kelantan fish sauce). You should mix the rice with all the veges and the sauce to get the taste of the flavour. You are right Anna, use hands to eat chicken much better. I really respect both of you, you know how to appreciate local food.

    You both have a very high tolerant value to each other , never raise voice to any disagreement . I remember last time when you both tiringly climbed a hill just to find out that the gate to the waterfall was not open to public , and you both felt sad but not up to complaining too much. That was what I like about you both. And that's a lesson for me.

    Not everyone knows/likes to eat Tempoyak.. I personally don't like Tempoyak.. You foreign tourists who come here if you don't like or don't know how to eat Tempoyak I don't find it strange that's normal.. Overall as a Malaysian I'm proud because of all the food which you try you will say you like it..thank you

    I guess the blue rice is original, cooked from the bunga telang or pea flower. Very nutritious flower

    The price is good considering your wife takes 2 pieces of chicken, that's why hers is RM16.
    As for the yellow paste, it's Tempoyak. It's fermented durian. It's a case of love it or hate it. But it's more tolerable than the fresh durian and this come from me who hates durian.
    The sauce they sprinkle on the nasi kerabu is "Budu", it's anchovies sauce, so your guess of "fish sauce" is correct.

    Comment on the pricing matter, this shop charge at local price n the price is very reasonable . How its charge , normally Nasi Kerabu alone ( only ) will cost about RM 5 - 6 . Meal or fish charge about RM 5 - 7 ( per piece ) , its depend what type or size .

    Kerabu is also means salad..so it's a salad rice. (Nasi Kerabu).. Normally the kerabu itself is a mixture of herbs like Bunga Kantan (a type of gigerly flower), daun kesum (the laksa leaf), long beans, winged beans, cashewnut shoots, lemongrass, sautéed coconut, onions, bean sprouts, with salted eggs, fish crackers, either chicken, meat or fish (you can choose any..with a little of gravy or sauce), also >> tempoyak and sambal belacan+budu (fish sauce), solok lada (these are optional).. You got to mix everything (as it's called nasi kerabu) because it'll enhance the flavour of the Nasi Kerabu otherwise you'll taste it just like normal mix rice (nasi Campur) ..

    Nasi kerabu : basic component : blue rice, sambal, salad, grated coconut with fish, budu (kelantanese fish sauce).
    - usually you don't put much curry/gravy on nasi kerabu. If you want additional protein, you can put dry proteins : grilled/barbecued beef (daging bakar) or grilled/fried/barbecued fish/chicken, solok lada (chilli stuffed with fish : Dan dropped his), salted egg or keropok (fish crisps). You can put "percik" gravy though. (Solok lada is my favourite)
    Fermented durian with chilli : tempoyak.(a type of sambal).

      Sultry S, agreed, basic component of nasi kerabu as you mention is already a complete dish..
      the only add on you may need is grilled beef or grilled fish.
      if you find it a little dry, may add a spoon of percik gravy.
      save fried chicken for another rice dish.
      in Kelantan, we don't take tempoyak with nasi kerabu, tempoyak will kill the fresh taste of kerabu

      sometimes nasi kerabu has some gravy- coconut based gravy similar to "percik" gravy (but not as sweet). The way to eat Nasi kerabu is you have to really mix EVERYTHING on the plate together so a mouthful will have the rice, veggies, protein (the best for me would be grilled beef), salted egg, budu (ikan bilis sauce which is salty). The most authentic nasi kerabu is usually found in Kelantan. Not very easy to get in KL. The big chilli and coconut is called SOLOK...really good! And it is a good side dish. Anyway, Anna was right, the best way is to mix and eat with the hand! You're already Malaysianized! LOL!

    nasi kerabu, you have to mix properly all the base ingredients that they gave. that you can eat a bit with any chicken, salted egg or beef.

    Nice to have a local guy who helped explain some of the dishes. Happy to see Dan picked one lada solok (stuffed chilli) this time and liked it. The prices are quite fair, I think. Anna’s “tempoyak durian” surprise was surely a cheeky one, and I am so surprised Anna loved it. This time you ate the stink beans or petai (Parkia speciosa) the right way without the outer skin. Petai is known to lower blood pressure, and keep heartburn away. I am glad you have good kerabu now because when you were in Penang, a lot of the kerabu has been artificially coloured bright blue. Real kerabu’s blue is more off-blue that is very light in colour.

    There is no standard what Nasi mix with what meal n curry flavour . Its depend on your personnel taste but you must first try ie rendang ayam taste . after a few time you will became pros with all mixture

    The most important aspect of eating Nasi Kerabu is to MIX everything (rice, veggies, sauces, protein, crackers, salty egg etc) finely and well, just like when you eat Korean's bibimbap.

    Nasi kerabu consist of blue rice, coconut n fish sambal, mix of herbs/veggies, sambal & tumis gravy, you can choose any protein/dishes u like. Correct way to eat that is to mix everything. Sometimes we squeeze some lemon for refreshing taste. I like my nasi kerabu with ayam percik/chicken grill with gravy (kelantan dish) or daging bakar/grill beef

    for me last time i dont eat nasi kerabu until one day im going to Kelantan (where nasi kerabu origin) and the host at Kelantan (PDRM - Police Kota Bharu) prepare us with nasi kerabu & since then i love the dishes nasi kerabu... but the better one is nasi kerabu at its origin place... same as nasi dagang, the best one is from Terengganu where it origin..

Even some tourist not loving the taste of durian but they still enjoy this pais patin tempoyak or patin masak tempoyak . Just a suggestion and I love your content.     Smelly bean we called it petai..when you eat petai,better to dip it with sambal belacan and then eat with rice,its so perfected. All the ulam you ll took is good for your healty. Nasi kerabu more delicious if you put ayam percik and solok lada.. Dont put so much kari its spoiled the tasted..

    Wow..second time coming😄, fyi the traditional Malay foods that have probiotics are budu, cincalok, tempeh, tapai. Anyway budu and cincalok taste too salty, need to take little by little. While the tempeh is from fermented soybeans. The tapai from fermented rice or cassava has a sweet and slightly sour taste. Bon appetit.

    Salted egg is definitely good with nasi kerabu. Nasi kerabu do not require gravy because it comes with a liitle sauce for the rice

    Mix all about 2 minute
    Then eat with side dish

    Good strategy Dan,Anna. Stick with one shop and try various dishes. And thats a good restaurant coz i can see have many food options, and clean. The tempoyak you can add other condiment together like budu, sambal belacan or cencalok so the durian taste diluted.

    Normally i wil add sambal belacan to the tempoyak n eat it together with all the ulam (vegies).mix it all together.a bit spicy though.
