Thank you so much for your comment I really appreciate it . You can add about a tbsp of white vinegar into the steaming water. I didn't add vinegar for this recipe because of the special flour that was used. 😊

Your steam buns quite closed with the Vietnamese Banh Bao. However it’s quite difficult to find this kind of special flour for Bao such as Lotus (from Thai) or Hongkong flour.
They don’t sale Hong Kong flour anymore. The company In Sacramental had closed down. If you live near LA California there a thai store you can get lotus flour. Amazon over charged. I bought in okc only 2.99 per bag .
It could be a number of things. Did you used the bao flour that has all the baking mix in it, (yeast, baking soda/powder)? How old is the bao flour, yeast and baking powder. Baking soda can turned your bao brown too. Baking soda produces alkaline solution in water that accelerates browning reactions.

2tbsp crisco veg .shortening. What is it ? Bao looking very good but you don’t give by how many gram it’s better.
Vegetable shortening is white solid fat made from vegetable oils.

You can substitute veg. shortening with lard or coconut oil.

I MADE THE DOUGH, MADE THE BUNS.
WHY DID THEY TURN BROWN!?!?!?!?
It could be a number of things.
Did you used the bao flour that has all the baking mix in it, (yeast, baking soda/powder)?
How old is the bao flour, yeast and baking powder.
Baking soda can turned your bao brown too. Baking soda produces alkaline solution in water that accelerates browning reactions.
