    Any kitchen shears must come apart as requirement #1. Not sure what brand I have, but didn’t know why I’d not gotten a pair way back when. Love their usefulness over these last few years.

    I work for Sam's Club. I use OXO Poultry Shears when I'm putting together Chicken Quarters and Chicken Breasts for our HMS dept. The Shears are great because they have a spring in the handle so there is less tention. The problem with that however is that if you wash the shears enough the glue wears out and the spring falls off. It would be great if they could change the design so that the spring is either molded into the handle or if it were secured into place with a screw. I really like scissors/shears that come apart. Easier to clean.

      Depending on how you sharpen, but in most cases scissors that come apart are also much easier to sharpen that once every 5 or 10 years to may do it ;)

    I've had good luck with Oxo and use a chicken specific shears that has one loop so I can use my palm to push down. It's nicer on my fingers.

    Left my JA Henckels at home when I left to study abroad so I picked up the Oxo Good Grips while here. Love that they both come apart and are comfy for my sausage fingers haha

    Cutco. By far the best shears I've used. Serrated blades that come apart and open wide. Great leverage, very comfortable.

      Nice my mom has Cutco stuff. I'm more of a Japanese style guy myself, but that doesn't exactly carry over into shears. Glad to know those shears are working hard for you guys.
      Cutco are the nicest handles I have felt. They seem like they could just slide into any hand and look stylish to boot.
      For me it's about the metal, more specifically how hard it is or isn't. I like a blade in the 62-64 hardness which lands me mostly in the Japanese category. Cutco knives have a hardness of 56 which would have me wanting to sharpen my knives more often and can't hold as razor sharp of an edge. I know I'm getting into nuances, but this info even pertains to sharpening angles. A traditional French/German knife is between 52-58 hardness and can take about a 20-degree edge. A traditional Japanese knife is 62-68 hardness and can take a 15-degree edge. Yes, you can sharpen any blade @ 15 degrees. the question is just how long until you return to your sharpener, 1 cut or 1 month depends on the metal.
      My knives are a sort of east meet west representation. They are the Miyabi Mizu line, Miyabi is J.A. Henkels brand of Japanese knives. They have a more French shape to their chef knife. There is a really nice set by them in a more German blade style, they are the Bob Kramer series by J.A. Henkels. Either way I like the SG2 stainless as it hits that 64 hardness, and both these sets have blades in this hardness.
      I do really like cutco though. For a traditional french style cutlery they are at the top with Henkels and Wusthof. And @ 56 hardness they hold an edge well and sharpen quite a bit faster.

    Maybe I am an overachiever but I have six sets of shears just for cooking, all are twenty plus years old and were a gift from a butcher buddy. That cauliflower, two minutes with a paring knife and that same paring knife quickly cleans up the overhanging dough of a pie.

      No, IMO you are not an 'overachiever'. You are a collector of kitchen shears. This 'overachiever' mentality is self-market nonsence to make said person appear as desirable in the workplace. I want a person who doesn't run and gun others.

    I own a pair of JA Henckels' that I got with my knife set. They work incredibly well. I haven't found a use for sheers in the kitchen, that they couldn't handle.

      D Hoosier HDX. My bff got a pair for each of us through Amazon years ago and we love them as they also have a jar opener built into the design. I checked Amazon to see if HDX offers them, and they're no longer available. I even checked eBay. :(

      You know what works faster as a box cutter than taking apart scissors? A box cutter! and you don't have to worry about glue residue and your food meeting.

    I have the same shears as the winning model, but under a different name: Kershaw Taskmaster. In doing a search it seams that Kershaw no longer sells them under their name, and Shun raised the price. The current Kershaw Taskmaster shears are a different design, and ATK rates them below the Shun and J.A. Henckels shears.

    Thank you so much for your review of the Kitchen Shears. I am considering the purchase of the Wüsthof Classic Poultry Shears and no one seems to have done a review on them. These are expensive shears and before buying I would love for Cook's Test Kitchen to review them. Would that be at all possible? Thank you! Michael

    There seems to be some understandable confusion due to a confusing video. The Shun DM7300 sheers do separate.

      Or more specifically, all shears from shun separate. Yet Shun doesn't actually make shears, they are all from a company called Kai. Which makes some of the best scissors and shears on the planet.
      Kai will cut anything from silk to Kevlar including any bones that might be in the way! Just make sure to buy your shears accordingly...

      The only thing I think Kitchen Aid does ok is their stand mixers, but that's iffy and the attachments are a rip off.

    Fiskars multi use. Heavy duty and they come apart to clean. One side is a knife when it's apart. I think I paid $13 at home depot.
    Also has bottle opener. Comes with sheath.

      Please, do the Fiskars Scissors steel hold it's edge for long? Also, did you try to sharpen them with the sharpening system, that comes on the sheath? Did it work? Thanks in advance

      The description of the Shun Multi-Purpose shears indicates that they do come apart for cleaning. It looks like they are also known as the Kershaw Taskmaster shears for about $26.00 from Amazon. 🤔

      @@mistergrendel32 The Kershaw and Shun shears used to be identical, but that is no longer the case. In a recent re-test, ATK has down-graded the Kershaw scissors to third place. They wrote: "The Kershaw blades have slightly less tension and shorter, shallower serrations; they’re also not as sharp as the Shun shears. As a result, we don’t recommend them as highly as the Shun shears, which remain our top pick."

    Couldn't these replace most knives for most functions in a home kitchen setting.?
    Sectioning onions, peppers, 'baby carrots'. Cutting chuck steaks into chunks for chili.
    Kitchen's are a gadget lovers dream but, seems like shears can reduce cutting tools to a simple practical few.

    Nice to know that there is a decent pair of shears at an expensive price. I do, however, like and appreciate my Cutco kitchen shears for ease of use, sturdiness and simple take apart to clean feature.

My 45 years old son was so impressed with grandmas Cutco shears he bought his own. By the way Amazon sells them.

    I had the displeasure of using the All Clad sheers at my mother's house this summer and nearly killed my hands while spatch-cocking a chicken. The handles just dug into my hand and felt like it wasn't worth using them.

      All-Clad is old news. I love their frying pans and handles, but there are many other clad pans that are much cheaper nowadays (get All-Clad if competitively priced). I don't believe in buying sets; I don't need even heating for a sauce pan, steamer, pressure cooker, etc. Knives the same; get a set and you'll get a ridiculously short bread and slicing knife and get a bunch of useless knives like a Santoku, utility, etc.

    I guess my question would be. I know you should never put a knife in the dishwasher but how about shears? how do they hold up. should you take them apart and place them in a dishwasher after cutting chicken?

    I have Kershaw shears. They do everything easily, come apart for cleaning. Reasonable price. A real workhorse. Had them at least 15 years.

    Shun is KAI brand from Japan. KAI makes the best tailors scissors in the world. The KAI 7240-AS is engineered to cut Kevlar, Nomex, fiberglass and other fire/puncture resistant fabrics.

      verry interesting! The same holds true for honing rods. normally they are not made by the knife maker, but on high end knife sets they will replace the standard plastic grip with a matching handle for the set. I guess these guys all really focus on their blades lol!

      @@bourbakis Shun has 2 different pairs of scissors. One is under 60 which is the one in this video. Just looked it up on google using the key phrase shun scissors. The better scissors are 80-100 bucks. But again, those aren't the ones in this video, they are a more premium option.

      While I do really like Cutco, the Shun shears are made by a company called Kai. Which make some of the finest scissors and shears on the planet. The real Shun Shears begin to rival the Cutco on price.
      That being said if I had either, I wouldn't go shopping for the other.
      My favorite thing from Cutco is their handles on their knives. Unfortunately I like my blade steel harder than Cutco makes theirs. Cutco is a respectable 56 hardness, but I like a blade that can hold a razor edge which requires over 62 hardness. I have found solace in the Miyabi Mizu knives sitting @ 64 on the Rockwell hardness scale while still being 100% stainless.
      Think ceramic knife performance with the longevity of metal, but the metal must be respected as it is more brittle like ceramic can be. With care and respect you will have many years!

      maybe check google, not amazon... Its kind of like asking the internet VS. asking a store. Best I have found with a quick look is 39.99 on bed bath and beyond. They are the multi purpose shears.
      Also much of the price hikes on products are from the "trump tax" or tariffs placed by trump. While the media focused on China, they were not the only ones to be hit. I watched graphics cards go from 500-900 and cell phones from 900-1200.

    Interesting video, but I have to ask, why didn't you include in your test - Ernest Wright shears (2 different models), Zwilling shears (Multiple models), and Cutco shears? I believe you would find all the shears I just mentioned, as well as many others, far above the shears you tested in this video.

Hi.! #1 for poultry and small game - the Zwilling Twin Select Poultry Shears Take-Apart, there is nothing better that my wife (who is a Chef) and myself have found. #2 for general purpose kitchen shears - there is nothing better than the Cutco Super Shears (We have 3 of these in our home, and one in my wife's knife kit). Have a wonderful and Blessed Christmas.!

    I just had a pair made in China that the bakolite handle became brittle and snapped when snipping Ramen noodles. So many look good in an image but don't cut bones well and the handles need to be strong and not hurt when trying to cut bones.

      @@MsMars. It's April 8, 2023. I hope you found what you needed. If it helps, we had a pair for 17 years and they finally gave out today. Their choice here is pricey but if my cheap one lasted 17 years, I'm sure these would last as long or longer.

      I would have liked to see Tojiro's, but wasn't that interested in how they cut pie dough, paper, cauliflower, or anything else I'd just do with a knife or paper scissors. Did they even mention what pair made spatchcocking the easiest? The plastic on the handles concerns me also; that crap tends to break eventually and if it's not full tang...

    I’m very surprised they didn’t feature Cutco’s shears. I think they would have appreciated the familiarity when compared to other kitchen shears, they feel more like comfortable Fiskar scissors or just a traditional scissor. Extremely durable and can almost literally cut through anything. They use a similar design in the blades that trauma scissors use, like the Leatherman Raptors. They feature little serrations in the blades that prevent slipping, like you normally would experience with harder stalks of vegetables. They can also cut through pennies without damaging the blades, as do the Leatherman Raptors. It seems like America’s Test Kitchen hardly features any of Cutco’s products, besides one knife if I remember correctly. The fact that Cutco is one of few American made knives that are “affordable.” They still aren’t as cheap as Farberware and they even cost about the same as Wüsthof, but I think featuring American made cutlery would give people dead set on buying Made in USA another option besides Chelsea Miller or Warther to name a couple (both are very expensive). Not dogging on Chelsea, I’d like to own one of her knives one day.

      Fryers are like exercise bikes; people buy them and end up not using them. They stink up your home, are expensive and troublesome to deal with, and baking often yields on par results. Air fryers are a whole different story.

    I wish we were culturally okay with using scissors more in the kitchen and at meals, like they often do in Korea. So many things where it's easier to just snip something apart.

      Yeah, I love the use of scissors at k-bbq restaurants. That’s why I started using scissors to cut meat at home.

      Different cultures have different product. -I see no need for a cleaver in a kitchen in the USA. -I also see little use for scissors (I would have done a lot of what they tested with a knife instead). I bought my Whustof as poultry shears and all I expect them to do well at is cutting the backbones out of fowl. -Which they do well!

    Ha ha ha I have been buying scissors from the dollar store my whole married life and using them just fine. They work for everything from cutting up chicken to cutting carpet. Not the same pair of scissors. LOL

    I would really like to know about cleaning and durability. I have had some inexpensive kitchen shears that worked well until after butterflying one chicken after that couldn’t cut soft herbs reliably.

      I have the Whustof; Have cut the backbones of a few chickens and turkeys with them. I would NEVER use scissors for herbs.

    Really strange content I must say. The video clearly says winner is “Shun Multi Purpose”, but the only link is to “Our best buy kitchen shears”, (Henckels-which were not the winner). Why no link to Shun, the winner? Did Henckels pay more? They were the only pair that got a link in the description, and I think it is odd.

    A good pair of EMT trauma shears will do a great job in the kitchen and they are cheaper than all of those kitchen shears. I just looked and Amazon has a two pack of Madison EMT Trauma shears for $17.

      They're not stabby stabby, small ribbons, don't easily come apart, and the leverage isn't good for spatchcocking.

    Lisa McManus is such a great tester/equiipment reviewer. She is really effective at describing things in a way that you understand exactly what is going on with the products that are being tested.

    Can’t find Shun kitchen shears. Amazon, Bed bath and beyond doesn’t sell this pair. Help! I want some. Iv needed good ones for so long. I never buy anything for the kitchen unless it has American test kitchens approval!

    Those two winners look great but my close second for best value is my $1 scissors with a 2 or 2.25" blade. They look like a gardener's clippers or snipper but scissors design. After 10 years of use they are getring a little dull and I am sure you can't find them any more at the 99c (Only

      ATK doesn't review large appliances. For one thing, they've been sponsored in the past, and currently are sponsored, by appliance makers, so there would be a conflict of interest. Try "Consumer Reports" instead.

    Cauliflower cutting was the strangest demonstration. I can destem and neatly remove all the florettes from a cauli in 6 seconds with my shun pairing knife. Shears are not the best tool for the job.. Also yes im just salty because those shun shears are $90 au on amazon, blows my mind

    So many people wasted time watching this evaluation. Most were looking for a validation of their choice. They are satisfied with their choice and their minds will not be changed, regardless of the test outcomes. I have been using my Shun classics for 10 years. No issues or problems. It may be time for resharpening.

    I notice that both of you are right-handed, and neither of you mentioned if the shears are as useful for left-handed people. As a left-handed person, not only have I had to deal with tools that were not made for the comfort of left-handed people, but I have had to deal with tools that were impossible for left-handed people to use. In the future, please inform your viewers if what you are testing is as comfortable for left-handed people to use as they are for right-handed people.
