That's because it's actually 6 strings in 3 courses of 2 (that is, in pairs that are always playing the same pitch, either in unison or at the octave), like a 12-string guitar has 6 pairs. That's what gives them both that jingly sound.
Bill is clearly a polymath. He is such a brilliant and funny man.
Bill Bailey is the most versatile articulate musician, comedian, actor and showman - (I loved his guest appearances in Hustle too!) he is a true talent and so humble while bathing in his stratospheric talent, but I am guessing on the whole he enjoys a quiet private life....
Bill is such and interesting, witty, and talented human. I could pretty much listen to him talk about whatever he wishes.

Well known instruments wherever Ottoman Empire was. They use it in Bosnia, my place of birth, but I've never heard it like this. I wish people would experiment more with traditional instruments.

Well, sure he's good, I'm not denying that, but non musicians often fail to realise that there is a lot of transferable skills between musical instruments (meaning that if you know how to play the first one, it'll be easier to learn the second one, and if you know two, the third one will be even easier to learn, etc).
It is even truer within a category of instruments; for example if he knows how to play the guitar, he won't struggle too much with the banjo, lute, this Turkish thing, etc. Notice how he's not venturing into playing the violin or cello for example, which are altogether more difficult to play well, require specific and constant training and talent and an are entirely different ball game.

Years ago there was a thing on twitter about entering Bill Bailey as the UKs entry to Eurovision. I think about that often, (YES PLEASE), and what would it take to get Bill up there playing a ukulele or something and singing a little folk song. I would love that and I think Europe would too.
