Hey man, nice video and it made me really hungry but for a complete novice like me you didn’t give us much info on how to do it. Indirect cooking at 140° stabilised? Added hickory wood? Does that mean you let the charcoal cook it at 140 for hours until it read the correct temp on the probe? How long did you rest it for?
