Bistek is super super super easy to make. The Instant Pot makes it even faster to whip up bistek, but you can also use a normal pot or pan to make this bistek recipe!
"Bistek" is the shortened word for "beefsteak" and is a pretty well-known Filipino dish. I remember my parents used to make it a lot!
For the acid ingredient in this recipe, I used calamansi. Calamansi is a small citrus fruit native to the Philippines, and we use it like you would use a lemon!
My parents didn't always have access to calamansi once we immigrated here, so they'd use either lemons or vinegar if we wanted to make bistek at home.
ALSO, THE MORE ONIONS, THE BETTER IN MY OPINION! Even after we run out of the beef, I'm down to eat all the onions that marinated in the bistek sauce mmmm!

This brings back memories. My mother made this every time we went to the beach. We’d go swimming for hours and then eat bistek w/rice.
Oh boy I never thought of Bistek Tagalog in the IPot…who knew? My beef will be tri tip (untrimmed for a bit of fat :) hope it works out. But I love how it’s minimal base ingredients and is IPot friendly. Keep cooking ! Ps I have a basket of beautiful calamansi fruit that was given to me, :)

You can pressure cook with very little liquid?
Can I use a bottle by Pamana that says "soy sauce with calamansi"? Will that throw off the ratio?
Ooh maybe you can try that bottle on its own and adjust it by adding either more calamansi (or lemon/vinegar if you don't have calamansi) or more soy sauce.
I'm not sure the ratio that Pamana uses, but I'm guessing it's usually used as a dip. Nevertheless, I think it would work for a bistek recipe! Let me know how it goes!
Thanks for the recipe. I have a 6Qt IP. Are the liquids enough to bring to pressure for a 6qt IP or do I need to add water?
I was wondering that too. I think you need at least 1 cup of liquid but it did only cook for 7 minutes.

Hi. So if I'm cooking 4 pounds, does that mean 7 minutes times 4? So 28 minutes? Or should I stick to the 7 minutes?
Have you ever made chicken relleno? My mom used to do traditional Filipino style and one with sweet rice, Golden mushroom soup , gizzards and liver.

If I’m putting about 3 lbs of beef steak inside the InstaPot, would it be wise to put the pressure cooker timer to about 12 mins since there’s more meat in there?

Beefsteak, was not shorten to Bistek. Steak is spelled bistec and is pronounced the same way in Spanish
That's what I thought too! When I looked it up, I found that the Spanish word "bistec" is a loan word derived from English! Of course, Wikipedia might not tell the whole story 🤔
wrong. bistek or bistec in Spanish is also a shortened word taken from English word. it isn't hard to look up the etymology...

But you need the liquid to evaporate to concentrate flavors into meat, so pressure cooking it you need to still fry it then reduce sauce. And btw the yellow Cala and I loses its true flavor, you need the green ones
