    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

      It's a great little orchard! This year there were still a lot of apples on the trees even after the last day she was open for picking. (She did add one more weekend for a "Picking for Charity" event, where 1000's of pounds were picked. Her whole orchard is only 200-something trees. We've been going there since the kids were little.

    I rehydrate my apples with apple juice, made from the same apple tree. Your way looks delicious.
    You have a better way of cutting them. Love the French fried cutter. Did you get it from Amazon? I did potatoes and cubed them, but that would have saved me time.
    Have celery going in my fd today, there was a sale on celery.
    Made some dog food today, so that’s next.

      Did you freeze dry your apple juice?

      Maybe you could try other things for rehydrating flavors: apple juice, something else.( I don't know what)

    I'm trying to calculate a recipe for freeze dried pie filling. I've made the pumpkin pie filling (very good) and hope to round out my homemade gift giving with an apple one. Suggestions or tips appreciated. Thank you for all of your hard work!

      It sounds like you are, maybe, trying to do something a little different? Everything dry but not precooked? I think it would work just fine that way too.

    Greetings. Let me first say that I really appreciate your 'experiments' and sharing the lessons learned. I find them very helpful and enlightening. I would like to mention, though, that I find myself frequently asking, "Was the food cooked/par cooked and then freeze dried or was it raw and then freeze dried?" Same question here. I wonder if you might consider mentioning this in your videos. For example, you used some FD apples with cinnamon. Did the cinnamon stick to wet raw apples and then freeze dried (did it stay on the apples or result in cinnamon dust in the bag) or was it applied in a cooking phase? Thanks for sharing your time

      Great questions. I try to show in the videos when I blanch/par cook any items before freeze drying. I blanch _most fresh_ vegetables and potatoes. When I'm freeze drying commercially frozen vegetables I don't blanch them because they would have been blanched during processing. I don't blanch most fruits; I'm not sure I've blanched any fruit before freeze drying. I have cooked some fruits before freeze drying, like the time I had some slightly underripe peaches - I cooked those with a bit of sugar until they were softened a bit.

      With the cinnamon on the apples, about 1/2(?) of the cinnamon stuck to the the raw, wet apples through the freeze drying process and into the bags. The cinnamon that fell off of the apple cubes during bagging, I used on the next batches of apples.
      🤣 I have to apologize for many of my older videos. In my focus to keep my older videos very short, most of my older, shorter videos are almost devoid of information! I tried hard to keep the videos down to less then 10 or 15 minutes, no matter what I had to cut out! (Like information!)

      Thank you.@@SchoolReports I have trouble remembering on some of my items if I blanched/cooked or processed raw when I open a container of FD foods. I'm going to have to note that on the packaging moving forward. Then when I prepare it, I can ponder causes of failure based on how it started. :)

      @@bonniecaouette2975 Good idea. Now that I'm trying a label printer I should add where or not mine were blanched, too. I do note that in my batch notes about each batch, so I can find the info later if needed.
      #1 failure is probably always going to be - not dry enough before bagging. (or bad bags. We had that happen once)

    Excited to do apples! Unfortunately I received my FD just when the summer and fall growing season was ending. Is there a particular apple you like the best for FD?

      Our local U-Pick orchard we go to has 5 varieties of apples. (all at 50 cents per pound!) Part of the "favorite" would depend on the final use. I'd have to say Fuji or Golden Delicious are my overall favorites for any use. We've never been unhappy with any apple we've freeze dried. We've FD'd a minimum of 7 varieties of apples. We have 2 young apple trees at our house now.

      🤣 While freeze dried apples may be my favorite dry snack, I do like apple pies and want to be able to make them from dried ingredients. And of course a lot of people ask about rehydrating various foods.

    I’m enjoying your videos SO much!! Learning so much from you!! I have a question if you don’t mind. I have the same set up as your sister. I’ve been FD eggnog. It’s going good!!! I now have two trays of my own garlic I chopped and froze in my freezer. I plan to put peppers and broccoli tops in the other 3 trays. I want to do these tomorrow. After I FD the garlic I want To go back to FDing the rest of my eggnog. I have a few gallons of eggnog I’m working on so I can enjoy some in June and July! Will doing the garlic and then going back to doing my eggnog make my eggnog garlic smelling or tasting? I’ve read to do your garlic just before you need an oil change to I guess rid the garlic traces? A big paragraph for a simple question. Lol. Sorry. 😊 Enjoying your company!!

      🤣 "A big paragraph for a simple question." My people here laugh at my responses. Someone will ask a 10 word, seemingly simple question, and I'll respond with a book! It cracks them up here.
      We have not worried at all what we've put in after a batch of garlic (or shrimp, etc), and we've had no issue. We also didn't change the oil after garlic. I wonder if our results have to do with the fact that we pretty much always prefreeze everything. I don't know why anyone would worry about the oil; it's a one way system, any air being pumped goes from the chamber out through the pump, it doesn't come back through. If it does, the check valve needs to be fixed. I suppose wiping down the rack and chamber wouldn't hurt.
      Some people have reported odor issues after some foods, but I can't confirm why.

    What would have happened if you browned the dry apple in a pan or in the oven before you put them in the pot & added the other ingredients? I sometimes toast rice before cooking it. Do freeze dried items get the same browning effect?

      I'm sure they would brown, but I haven't tried it. I'm not sure what it would do for them, but it could add a nice toasted flavor to them. If I remember I'll try it next time I open a bag of apples. If you try it, please let us know how it turns out.
