My daughter got one of those ceramic thingies from a home party whose name MIGHT rhyme with Tampered Clef. . .the kind where you can spray the inside crack an egg into it and nuke for about 50-55 seconds during which you can TOAST the English Muffin and assemble with precooked sausage patty and cheese. If you want to get fancier, cook a pound of sausage only crumble it-then break an egg into a smallish clean jar, add sausage crumbles and shredded cheese to taste then nuke in ceramic thing I’d while muffin is in toaster and assemble. Oh thank god. I came to the comments thinking the impossible breakfast sandwich is the one that came off the menu. In Albania we have a plant based sandwich and we don't even do vegan here. Cut thin eggplant slices long ways fry until crispy, salt pungent red wine vinegar and very finely chopped garlic. Olive oil in pan add a long pepper don't do nothing to with the stem fry until both sides start getting black salt pepper vinegar. Thin long ways cucumber slices for refreshment. The pepper has a lot of juices trapped in since you did nothing to it, use your bread to smush be pepper and get those juices all over. Assemble salt pepper vinegar to your liking enjoy

They're super similar but there is a difference in taste. Either way, mayo isn't a bad thing, and I don't get why so many people are grossed out by it.

Don't add salt to the eggs until it's cooked. The salt breaks down the protein in the egg and it makes it non fluffy eggs.
You can also whisk a small amount of milk into the eggs if you want fluffy. Personally I think the sausage has enough salt on its own.

Oh thank god. I came to the comments thinking the impossible breakfast sandwich is the one that came off the menu. I only get Starbucks when traveling but that sandwich is my known-safe option when I have to eat at an airport, no matter what time of day. (Known-safe as in meets my dietary restrictions, consistent quality, and will keep me decently full for a few hours)

In Albania we have a plant based sandwich and we don't even do vegan here.
Cut thin eggplant slices long ways fry until crispy, salt pungent red wine vinegar and very finely chopped garlic.
Olive oil in pan add a long pepper don't do nothing to with the stem fry until both sides start getting black salt pepper vinegar.
Thin long ways cucumber slices for refreshment.
The pepper has a lot of juices trapped in since you did nothing to it, use your bread to smush be pepper and get those juices all over. Assemble salt pepper vinegar to your liking enjoy

@debbietusman3933 that to me sounds perfectly fine. Maybe hold off putting mayo on the the ones getting stored, until reheat, but mayo is just egg and butter. I would eat egg with sausage, or even egg with egg. Also, and this might be sacrilege, I like mustard on my breakfast sandwich. But that's cause I can't have ketchup.

@@magnawurvel1619 Mayo is actually egg yolk and oil, with some vinegar added. I think you're thinking of hollandaise sauce, which is egg yolks, butter (preferably clarified), and lemon juice. They're super similar but there is a difference in taste. Either way, mayo isn't a bad thing, and I don't get why so many people are grossed out by it.
