Cooking series - 23(Eggless Black currant cake)

  • Ingredients:
    Milk
    Non fruit Vinegar
    Maida (all purpose flour)
    Baking powder
    Baking soda
    Condensed milk
    Butter
    oil
    Vanilla essence
    Whipping cream
    sugar
    water
    Black currant crush
    NOTE: Make sure you keep things ready in room temperature for the cake and cool temperature for frosting it
    Process:
    Take boiled milk and set it to room temperature- 100ml add 2 cups of vinegar as shown in the video- Let it set for a while
    Lets now work on dry ingredients(Maida 100gms)- seive the maida 2- 3 before use for aeration add a spoon of baking soda to it and 2 spoons of baking powder and mix it well and keep aside
    Moving on with Wet ingredients(130 grams of condensed milk/ 30grams of butter/ 20 grams of non flavoured oil/add 2spoons of vanilla essence) mix it very vell so that no lumps should be found
    Now add the milk with vinegar which was kept at first to the wet ingredients mix well and its time to add dry to wet ingredients. Add it in batches and use cut and fold method for a good soft cake until it becomes smooth enough
    Keep the cake tin ready by applying butter to it and also adding butter paper at the base of it..Now pour the batter to fill half of the caketin and make sure its evenly spread.
    I am not preheating my OTG(If you want you can preheat)- Temperature differs for the oven so try keeping them as minimal 150C for 25mins i checked using tooth pick and kept again in my OTG for the second time for 150C for 15-20mins- Keep checking the OTG regularly. You will have a good smell when its done.
    Take the TIN from the OTG and let it set for sometime around 10mins until you can touch the TIN (Now wrap it with food wrapper so the upper crest dont become hard and the cake gives softness to it)
    Now take whipping cream and beat it for 2 mins in 1and 3 mins in 2 and 4 mins in 3 speeding and so on. so t=it will become supper thick and sticky - you can add food colour and also black currant crush to it for the flavour and mix well once.
    Take some sugar and add water to it for making sugar syrup
    Now cut the cake in 3 slices and add sugar water to it followed by whipping cream and black currant crush. then place second slice and repeat the same step and do for the next step as well
    Now you can apply the cream allover the cake and freeze it for the next level coating
    You can noe decorate as you like or just eat it like that.
