1:28 thank you! I always felt like I had ocd when cooking cause I wash my hands so much. EVERY cooking show I watch, the person touches uncooked foods and touches EVERYTHING (like the same salt and pepper shaker your kids will later use at the dinner table) with no edits. I know they can’t film washing hands for entertainment value, but it’s never even mentioned.
We’ve had those in Costa Rica forever, we call them “pastel”, different fillings and all, real good! 🇨🇷

Thanks #Munchies for another solid guest Chef. I love twist on a deep fried chicken pot pie and especially his use of schmaltz in the roux. I do think his CPP needed some frozen peas. Off topic... We all know Vice filed for chapter eleven and I hope the Munchies team manage to survive and thrive in the future. I cannot thank the entire team enough for one of the best online series ever created. I have no doubt that Anthony Bourdain would have loved this show. The entire focus has been on the average joe/jane who started from nothing and achieve success. Thanks for honoring many unsung heroes of the culinary world.

Garlic lay a knife flat part down and up then use ikyour hand to crack garlic easier to peel my mother taught me that way i live the recipe tho I'ma definitely try it tomorrow

FYI...although there is not a lot of either, just a heads up, DO NOT put those leftover veggies on your dogs food. Garlic and Onions are both toxic do dogs. Just eat it yourself, I'm sure it's delicious.
After boiling for 45-60min those veggies will be practically devoid of flavor and texture.
Only if the onions/garlic were raw. Cooked, especially in small doses, is fine.
@@aegresen No it is not, onion, garlic, chives, shallots, and leeks in any form (cooked, raw, dried), any amount, are toxic to dogs and cats.
@@henrycooks1883 Yeah, nah. I've got confirmation from a vet that cooked onions and garlic are fine, as long as they are in trace amounts. The same way you can feed oreos to dogs since the chocolate in them is small as well. The one thing to keep in mind is the size of the dog, since the same dose can be high for small dogs as opposed to big ones.

A pasty is always baked, and always a heavier pastry. The closest this thing relates to is an Amish fry pie, or a Southern fried pie. usually, even Empanadas are baked

It is though. He used the process for creating an actual pot pie, all the way down to the roux, but instead of putting in a pie crust in a pan he made it hand held. You do realize there are a ton of cultural and non cultural foods all over the world that are sealed in a dough or flour based pie crust? Empanadas were not the first, last, end all be all of pie crust recipe’s. Lol 😂

@@Nano_987 you seemed a little triggered, so imma join the fun and call it a fried Cornish pasty because it actually resembles that more closely than an empanada…main difference is that one is baked and one is fried. Filling is pretty much the same though… traditional empanada usually has carne asada and papas…
@G H empanadas can be baked or frayed ,traditionally every region has his fillings the flavors are endless, it's more about the pastry arround than the fillings but you do you 🤙

Why is spatchcocking the chicken better than just cutting it completely in half?
If you spatchcock it you have more contact area to heat the meat for evenly. Especially in this scenario where you are just browning the meat for developing flavor you want more surface area to get more browning of the meats. If you didn't care about browning the meat as much you could just cut it in half, especially if your Dutch oven isn't big enough to lay the bird down.
Spatchcocked chicken provides a greater flat surface relative to volume. If you fry a halved chicken, the halves tend to curl up.
Cut the bullshit whit the "gourmet" stuff, this is a freakin empanada in my book...

The haphazard attitude is a schtick and amplified for uniqueness, but it’s kinda annoying that any type of ethnic, non western food, that approaches a dish this way is considered “rustic/street.” this dude is some how lauded for deconstructing French pastry and a mirepoix, and whyt women wearing Lululemon are prob snail trailing over the fact that it was even seasoned.
