Okay hear me out, I have worked at 5 sushi restaurants and i find that if you rinse rice really well and do equal parts water to sushi rice and bring to a boil, turn it down to medium/low and cover with lid for 10-15 min then turn heat off and let it steam with lid on for 10 min it makes for less mushy and easier to work with. You can always splash in more water as you go if it seems too dry

Please rinse the rice. It removes excess starch from the grain's surface, which prevents cooked rice from becoming gummy, resulting in a fluffier texture. It also helps to remove dirt, dust, debris, and potential pesticides that may be present on the rice kernelsIt will be safer and healthier for you. For sushi, use short-grain rice (I noticed yours was medium to long). Boil 3 parts water, two parts rice. Once cooked, set aside to cool down for a bit. To make it more authentic, sushi rice has some extra add ons. Combine rice vinegar, sugar, and salt in a separate saucepan (some use konbu extract, but I don’t). Cook over medium heat until the sugar has dissolved. Allow the vinegar mixture to cool, then stir it into the cooked rice. Stir until the rice is nice and sticky - it'll look wet at first, but it'll dry as it cools. You will have the perfect sticky Japanese’s sushi rice. It will have that special familiar sushi rice flavor. Of course, it’s easier to make rice in a Japanese Zojirushi rice cooker, but you are in a van. You can do it with your sauce pan just fine. Make sure to keep wetting your hands while handling the rice so it won’t stick to your fingers. Also cut the rolls with a serrated knife. Makes a much cleaner cut than a smooth blade. Love mine with sushi and wasabi. BTW, it’s perfectly fine to eat sushi with your hands as well (but not sashimi). I spent two years in Japan. Been there a few times as well. But still, looks like you and your friend’s sushi was still tasty. In the end, that’s all it matters. 😁👍
    Ingredients:
2 cups uncooked Japanese short-grain white rice (sushi rice)
    3 cups water
    ½ cup rice vinegar
    ¼ cup white sugar
    1 teaspoon salt
    Hope that helps! 😇🙏🏻

Also if you use cling wrap to roll it you can cut into it with the wrap on while keeping it all together

We make sushi every week. I don't like nori so I use soy wraps for mine. We put our rice on top of the nori/soy wrap like Sam did.
