Would you be able to elaborate more on how to choose a weakness/handle that question regarding a weakness? An example would be great, or sharing a live walkthrough of that exchange.

To choose a weakness, I’d recommend avoid weakness that are critical for the job, e.g if you are applying for a visual designer role, don’t talk about weakness like doing poor in visual design. But do pick weakness that are real and are not core skills required for the role, and emphasize on how you overcame that weakness, to demonstrate that you are good at improving yourself.
