- Authentic way to make the all time favourite Goan brinjal Pickle! This recipe is for those who prefer less oil and no sugar! This recipe is so tasty, a combination of sweet, spicy and sour. This homemade pickle is easy to make and store, so do try it out!
Ingredients
800g Brinjal / Egg Plant
10 garlic cloves
1/2 tsp fenugreek seeds
1/2 tsp turmeric powder
1 tsp Cumin seeds
15-20 Kashmiri red chillies
3/4 cup vinegar
3/4 cup oil
12-15 garlic cloves (sliced)
1 1/2" ginger julienne
12-15 curry leaves
200g jaggery

JAGGERY is a traditional non-centrifugal cane sugar consumed in the Indian Subcontinent and Southeast Asia. It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour. It is similar to the Latin American panela, also known as piloncillo in Mexico. It contains up to 50% sucrose, up to 20% invert sugars, Jaggery is very similar to muscovado, an important sweetener in Portuguese cuisine and British cuisine.

Thank you. You can substitute it with sugar. But here we consider Jaggery as a healthier option.
@@HomeCookingGoa watched a few more videos - saw the substitute on some sites, so I used your recipe as the base - it's been "resting" for a few days now, but a sneak taste - all I could have wanted. Absolutely delish. Will have people over this weekend to share with a great chicken saag.
Love the recipe, l shall be making it. I regret you used such a dark jaggery as it killed the lovely red colour of the chillies.
We use jaggery just to make it a little healthier. Adding sugar will retain its colour but sugar is not good for us.😊
I love Brinjal pickle, but have only had it from Sharwoods and others. I have't tried to make it at home yet, it looks tricky.
