    Please make potatoes with fermented red tofu and green onions it’s great in a iceberg lettuce wrap. You can also use combination chicken wings and potatoes too.

      "Asian" cuisine includes many ethnicities. Cambodian, Vietnamese, Thai, Malaysian, Japanese, Chinese, Korean, Filipino, and more. Each nation has very different ways of cookings and "normal" pantry items. Even in China, which is a HUGE country, there are MANY regions which have different "staples" in their "pantry". Look here for "Chinese Pantry" items.

    Thank you Mikey! I have enjoyed this dish at several restaurants and tried to replicate it myself to mixed results. By following the technique in your video with a few of my own additions I now can make this at home and be proud of the results. I'm so glad I found your channels and keep up the great work!

    This is my absolute favorite dish- I studied abroad in Beijing back in 2011 and probably ate this twice a day (the restaurant next to my campus even stopped taking my order as soon as they'd see me walk in the door for take out- they would just ask- "Okay how many portions?") I've had a tough time replicating it (aka ending up with stirfried gloop or hashbrowns basically) but this recipe is perfect!!!! I might try to sub out banana peppers or poblanos instead of the jalapenos though (I just prefer their flavor). Thanks Mikey!!! :D 很好吃!

    Mike, you should get a madeline slicer. It would make it easier to slice evenly and it's much quicker.

    I've never had this or made it. Just saw a couple recipes of it recently and have it on my list of things to try making. I took from those recipes though that the acid was not just for flavor but to fortify the cell walls on the potato and keep the texture more crisp. Off hand I think at least one called for the vinegar in the soaking liquid.
    I'm going to have to experiment with this a little.
    I know when I first started using cabbage I'd have issues where recipes would say it would be tender in maybe 10 or 15 minutes and I'd be cooking it for like 45 minutes and it still wouldn't be really tender. Finally worked out that it was because I was adding the acid at the beginning and it was keeping the cabbage crunchy longer.

    I would love an ingredient-specific episode on using lemongrass. I have been so unsuccessful with it. I don’t know if I am not getting good product in my area or if I’m just ignorant on how to use it. I love the aroma, but I don’t even be able to get that when I cook with it. Please, HELP.

      Very late I know. I can tell you what I figured put on my own. It works. I bruise the lemongrass and add it in oil towards the beginning then I add one or two at the end after I have switched of the heat. The food shoul be still warm. I hope this helps.

    Mike had this recipe on his other channel @strictlydumpling before but in that one he fried Sichuan pepper in the oil for the first step and also didn't use any chili oil. I wonder he took it out this time because it conflicts with the taste of chilli oil .

    This looks lovely! I was curious though. Our store is sold out of Rice Vinegar, and does not know when a new shipment will be in. Do you think it would still taste good with Apple Cider Vinegar or White Vinegar? Or is it worth ordering the RV online?

    My son loves this. But my version is only 2 ingredients. Sweat some onions add in the potatoes, cook till tender, season and it's done.

    mikey you should buy a western style chefs knife. they are much easier to use than the cleaver for most things and will help you improve your knife skills

    the easiest way to make potato is to rinse it with water and put it in the potato express bag and to the microwave. preparation time: 10 seconds cooking time: ten minutes, and nothing to wash afterwards
