The amazing Levi sequences are hand-drawn by the GOAT Arufumi Imai. He’s amazing. Pretty much all moving objects (people/vehicles etc.) are hand drawn. The back grounds are 3D a lot of the time
The Levi chase scene is still to this day one of the smoothest, sickest, coolest and downright most impressive sequences i've ever seen in anime history. Speechless. Jaw dropping.

They draw it all by hand, frame by frame, just instead of doing it on paper it’s drawn on tablets so making corrections is easier. They colour it digitally too, but everything is still drawn by hand. It’s even more impressive when you learn that it is here when AOT’s production schedule began to get shit to put it lightly, so then managing to pull of making a show which defined the standard of quality for modern anime over the last decade is outstanding.
To elaborate on the frame by frame, typically you'll have key frame artists and in-betweeners. I think computers/technology have advanced enough to do in-between guess work on its own or at least you can use 'puppets' for 2D work now. Not sure if WIT Studio utilized any of that technology here though.
@@mocrue618anime never uses puppets in animation, that’s a western thing used in flash animation, and you can clear see the difference between puppets used in shows like adventure time and then frame by frame drawn shows like most if not all 2D anime. in between frames are drawn by secondary animators, and key frames (the major frames in a scene) are done by the lead animators. there are also corrections often done by Animation Directors who correct the individual drawings so their designs are more consistent. however there are cases, like here with Arufumi Imai, which are 100% independently drawn by the animator.

You absolutely hit the nail on the head when you talked about the walking dead vs attack on titan. Very rarely is a character death in AOT done for JUST shock value, it's almost always used for something else as well. Like the levi squad being used to show just how dangerous the female titan is or marco for Jeans character development. Meanwhile the walking dead just throws characters away for shock value.
Colouring, effects work, compositing, and also backgrounds (especially when theres lots of movement) are done digitally usually. Character animation and other important focus elements like that are either pen to paper and scanned, or drawn digitally (still frame by frame). Usually you'll have a key animator who handles the key poses and a in-between artist who smooths out animation with frames that transition between those key poses, but in some cases a talented animator will handle the animation for a whole "cut" (shot or sequence). This is called "sakuga," an example being the really dynamic shots of Levi here which were animated by Arifumi Imai. This isn't the same for every production and there's more to the process, but this is a good basic rundown.
Just imagine that the season 3 took almost three years of production, is insane the quality of this season, after this season the studio leave the production for the season four and Mappa studio tooks the leads

Wow, this episode is a masterpiece! Even if you think so, the next peak that exceeds that peak will come again and again, and the viewer will become scared and wonder, "How far will this story go...?'' This is AOT.
The chase scene is definitely some kind of 2D and 3D composite. There are a few places, where you can see the backgrounds being 3D, but the characters show undeniable 2D signs. And yet, the characters move in perfect sync with the backgrounds, without any of the all too common moment of disconnect, when the 2D is done first and the 3D backgrounds filled in afterwards. So my best guess is, that they made the whole thing in 3D first, with low-res stand-ins for the characters and then painted over those stand-ins in 2D. Mind you, that's just my speculation on how I've seen it done in other shows, but it would make sense for AoT to do it that way too. To be fair to Jean, he never killed a Human before. Mikasa on the other hand, did stab the kidnapper that was strangling Eren, when they were still children, so her inhibition would naturally be lower, even before factoring in her intense attachment to Eren.

This scene and AOT as a whole uses handdrawn effects and characters, with mostly CGI backgrounds. JJK does it similarly. Probably Pretentious is a youtube account that dissects animation for popular anime series, but be wary of spoilers. I think he has an entire video just dedicated to Season 1 of AOT though.

The animation in this half of the season is the best there it gets (though its always great). Since it is a more person focused season the choice to step up the animation for it is a great one imo. Season three (part one and two) could honestly be the best season. Then again season 4 exists lmfao
Facts. AOT is literally perfect in so many ways. Only manga i've got above it is Jujutsu Kaisen, but jjk has noticable flaws at the start, AOT is perfect from beginning to end
I don't know if JD reads comments, but for the second time I have to preface: Hajime Isayama is the writer of the manga (Japanese comic) Attack on Titan, and this anime is only its adaptation. Please, we are already on the third season, please JD when appreciating Attack on Titan's writing, appreciate Isayama's, as he's the author! Just saying.
