Good question. You use a meduim made out of akadama powder and sphagnum moss and other materials, which is usually called muck, and is similar to clay. You make a small retaining wall with the muck and that acts as the walls to hold your potting medium from just washing away.

nice video, but how to you plant a Bonsai tree on it. It must have some depth
