Since my first keto meal prep video was so popular ( • EASY KETO MEAL PREP RE... ), I thought I would follow up with another easy keto meal prep video with five dinner ideas using beef. Each recipe uses either chuck roast or ground beef. These are all recipes that take less than 30 minutes to make and are family favorites!
In this video, I give meal prep tips and give easy recipes that use the slow cooker, instant pot, oven and grill. Many of these dinners can be made up earlier in the week or the night before to make your life EASY!!! All use beef - either a roast (I use chuck roast) or ground beef.

SLOW COOKER KETO STEAK & PEPPERS
(double the recipe if using for fajita pie)
3-5 pounds chuck roast or shoulder roast, cross-rib roast
1 red bell pepper, sliced
1 green bell pepper, sliced
1/2 yellow onion, sliced
1/2 cup canned crushed tomatoes
3 tablespoons liquid aminos
2 tablespoons red wine vinegar
dashes of hot sauce
1/2 tablespoon salt
1 teaspoon garlic powder
Add all ingredients to the liner of a slow cooker. Cover and cook at low for 6 to 8 hours or high for 4-6 hours. Before serving, shred the beef with two forks or by using an electric mixer. Serve over cauliflower rice or shirataki rice. Or use as fajita meat.
KETO FAJITA PIE
Keto Pie Crust
3 1/2 cups shredded mozzarella cheese
1 1/2 cups almond flour
1 egg
1 teaspoon baking powder
1 teaspoon xanthan gum
Steak Fajita Filling
2 tablespoons avocado oil
1 pound pre-cooked or leftover steak or roast, diced into bite sized chunks
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1/4 yellow onion, sliced
4 ounces cream cheese, softened
1 1/2 cups shredded cheese
2 teaspoons taco seasoning
Preheat the oven to 400 degrees Fahrenheit. Start by making the keto pie crust. Melt the mozzarella cheese using a microwave safe bowl in the microwave for 2 minutes or in a non-stick skillet over the stove top until melted. To a food processor, add all ingredients. Pulse until combined and a dough ball forms. Place dough into between two pieces of parchment paper. Roll out dough into a circle until the diameter is 2 inches larger than your pie plate. Remove the top layer of parchment paper. Place pie pan upside down on top the center of the pie crust. Flip upside down so the pie crust lands on top of the pie plate.
Press the pie dough into the pie pan. Get rid of excess if needed. Poke holes in the bottom of the crust. Bake in a 400 degree oven for 10 minutes.
While crust is baking, move on to making the fajita filling. Add avocado oil to a skillet. Heat over medium-high heat, then add bell pepper, onions and left over beef. Saute until slightly softened. Remove from heat.
In a small bowl, add cream cheese, 1 cup of cheese and taco seasoning. Cream together with an electric mixer.
Remove pie crust from the oven and decrease oven heat to 375 degrees. To the bottom of the pie crust, sprinkle 1/4 cup shredded cheese. Using half of the mixture, drop dollops of the cream cheese mix over the base of the crust.
Add the steak and pepper mixture to the pie crust. Then add remaining cream cheese mixture. Top with remaining cheese. Bake at 375 degrees for 6-8 minutes or until the cheese is melted and bubbly.

Don't lock your crockpot, it can explode the lid. I am on a Facebook crockpot site and it has happened to several people. That is just for transporting your crockpot. It builds up too much steam for the steam hole to let out

It can also ruin the seal. Yes, only meant to use for transporting. Don't lock it while storing either.

We had the smash burgers last night. My hubby said thank you for the nostalgia!! They were so simple yet so great, it really was like having a burger from our favorite little burger join many years ago. :)
My family and friends just LOVE the chuck roast recipe and so do I! I accompany it with keto veggies and a small salad. Everyone leaves the table satisfied and any leftovers are requested the following day. Yum!

I'm a beef lover so I loved this video. Thx for sharing your recipes!!! When I grew up, your smash burgers were my mom's hamburgers. But she mixed an egg, chopped onion, salt and pepper into the ground beef before dividing it up and smashing the burgers. Sooo tasty!!!

I lost my wife of 53 years in 2020 and at the time I was 300 lbs. After she died I changed my diet to eliminate carbs as much as possible, haven't bought sugar, pop or flour since. Living in a small town with only 1 grocery store and about an hours drive to the nearest city where I might be able to find keto friendly options if I knew where to look makes it hard to go totally keto. I am now down to 230 lbs. I like many of your ideas but sizes are usually for a family, being alone now I have no problem making larger quantities so if leftovers will freeze well or keep well in the fridge for a week or two that would be good to know.
Looks like some good staple keto recipes! Thanks for sharing. I meal prep usually twice a week. I’ll do a whole pork butt for chili verde, big pack of streaks, and/or chicken thighs is always easy. Also roasted veg or sauté for sides.

My favorite meal prep for ground beef is soupy Picadillo, i could eat that everyday for life and be satisfied

I should meal prep more often. It encourages me to make healthy meals during the week, instead of grabbing fast food that's barely keto.

Definitely trying the cheese meatloaf and the shredded pot roast. I like to add iItalian dressing and pepperoncinis to the roast and then shred. Delicious! I meal prep every Sunday, religiously, to keep from cheating and I Love the convenience for the week.

These look great! I'm leaning towards more soups. My blendtec has a soup setting and I can throw in cold food and pull out hot delicious soups. My family of 4 including 2 under 4 loves asian soups and creamy hardy soups can make a delicious easy meal. I'm not a meal prepper/planner because when I've tried it in the past and it comes time for dinner, I don't want what I've planned. Faced with a food I'm not in the mood for, I can't eat it. So, I plan meals the day I plan on making them. I grab my coffee in the morning, then sit down with my carb manager app to look for something that sounds good. If I don't have the ingredients, I move on to something else.

Looks like 4 quarts of liquid in the slow cooker. Did you add some sort of stock? I can’t see it on the recipe.
Chaffles seem to be all the rage. The one interesting use I'm going to try is as a burger bun. I've got that mini waffle maker on order, and hopefully, I'll have some buns again. I've been eating my burgers without buns, and when eating out (which has been really rare since I've been keto, and even more rare since COVID), as lettuce wrapped burgers.
I’ve made Chaffle hamburger buns before. I add a little bit of butter to the mixture and top with sesame seeds.

Great Ideas, but as I have a chronic Gout problem beef is out. I probably sub pork, Chicken and Textured Vegetable Protein or lentils.

That’s so true Mandy. Really good food usually just has a few ingredients and a lot has to do with the way it’s cooked or the quality of the ingredients.
We would call that chuck steak, usually sold cubed as stew meat here

BTW always meal prep (okay 90-95%)..gluten and lactose intolerant, so I try my best to avoid eating at cafeteria at work...even if listed gluten free I find it’s not always the case...I now buy prepared frozen gluten free items to keep on hand if I’m too busy to meal prep so as not to get tempted to eat out/order out.

Can I use gluten-free flour for the fathead dough instead of almond flour? The reason I ask is that almond flour is a bit expensive for my budget right now.

I have the Instant Pot Duo Crisp. It has an air fryer lid too but I don’t really use it as an air fryer. I think my regular air fryer does a better job. I just use it as a pressure cooker. You could just get a 6 or 8 quart instant pot and save money. 😀

How do you freeze and thaw the fathead dough?
I stick it in a ziplock bag either in a ball or flatten out. To unthaw, leave at room temperature for 30 minutes or place in the refrigerator overnight or a few hours.

Hey there, I’m no expert but I saw your message and wanted to suggest just keep it simple. Find clearance meats, eggs, dairy and veggies and eat 2 meals a day. On keto it’s pretty easy to do. I also have the FlashFoods app which partners with your local grocery stores to mark down close to expiration items or just items they’re trying to clear out. Find great prices this way. Hope this helps!
So there is no KETO recipe for a bun with the Smashburger? But it's shown in the picture. This is reminding me of the Fast-Food Joints that picture a lovely taco or Chicken sandwich, and then you get something completely different.

I usually use 2 pounds of beef and divide it up into roughly 1/3 pound patties.

I love onions and always cook with them. I just found out they have a lot of carbs
I try to only add 1/4 or a 1/2 of an onion for the entire meal...unless it makes a lot.
