It's not very surprising to see that this game has lots of glitches. You're going to multiple galaxies, of course their realities are going to be weird.
0:55 isn't a glitch. It's a failsafe to help players who got stuck out of bounds. Basically, in Galaxy 1 and 2, Mario will die if he stays in the air for too long.
Employee: "Hey boss we made a game with gravity and you can orbit some of the smaller ones, should we enlarge them to avoid it or.." Boss: "Kill the player" E: "What? but they didn't do anything except orbit the same planet and can still stop with a spin" B: "Kill them"

I'm not entirely sure how it works exactly, but from what I understand, it seems that the game checks to see how long mario has been affected by the gravitational pull of planets while airborne, and if it does so for a long enough time, the game assumes the player is stuck somehow between 2 different opposite gravitational pulls, which would more or less softlock them. To fix this, the game just decides to kill the player so that they can get out of that predicament, even if they already have a way to do so.

I'd say Mario's death at 0:47 and 2:03 are intentional. Creating a custom collision mesh for the levels of SMG would likely be a lot of work and hurt performance, and preventing softlocks is desirable, so a simpler option would be to set a timer when Mario jumps and kill him if he doesn't land after a period of time.
It's actually partially emulated, the code was recompiled for the Switch and runs natively, while the graphics and sound is still emulated. Sunshine and SM64 are fully emulated though.

One glitch(sort of) that I know is still in is what you have to do to get in the fountain for kaizo smg1, and it works on the switch, you just have to maximize your third jump's height, and spin at the peak. I even did it myself, even though its harder with the weird camera.
I remember accidentally doing a glitch in the garbage-destroying mission. I somehow managed to "die" , run out of time and have a bomb explode at the same time (first try, too!). As a result, when Mario began talking to the Gearmo, the camera started rotating right and down... So weird...
There’s another glitch where Mario or Luigi plays the blowing up the bombs with Bob-ombs where its timed for 30 seconds. If done on the right time and you fall off right before the timer reaches to zero instead of losing a life you’ll be taken back to the Bob-omb game but the level zooms in exploring while the “Too Bad” music plays.
In Good Egg Galaxy's third mission, there is a pipe and a Launch Star close together. If you enter the pipe and immediately try to spin, the Launch Star will pull Mario out of the pipe and the music will disappear.
I think there was one in the big stone fish and the golden shell where you can wall jump on the wall to get the shell instead of getting all of the launch star peices

This may be like the first all stars, cuz i tried some glitches in the first game (ex: SMB 2) and tried it into the all stars version, and it actually works.

I don't know if they intend to patch the glitches, but it seems they at least wanted to make sure the games run well, and pure emulation would not provide that.
honestly, i think the glitch in space junk galaxy isn't a glitch. Sure, they might've put it wrong, but it's probably if someone stupidly forgets how to use those sticky slingshots. That too, the speech bubble still points to the toad.
Idk why in Sunshine after I tried to rescue Peach the game got bugged and I cannot unlock all powerups in the plaza, and I know that after you try to rescue Peach the Toads go to another place but they still next to the cannon like if I didn't tried to rescue Peach, I tried doing it again and nothing, and everytime I return to the plaza it acts like I just unlocked this level when you must look at the Sun (Idk the English names, I am Spanish and I can't simply traslate them because they change names between languajes)
the insta-kill spikes is not a glitch, you're supposed to die there! if it were to give damage, mario's knockback isn't enough to reach back on the platform so you'd be stuck there anyway!
i got softlocked between two switches after the moving sharp things stopped moving and i got so mad because the only way to leave was to exit galaxy entirely
What about the glitch where you can long jump off the back of an airship in Space Junk Galaxy and end up on a different mission's planet. I remember doing that a lot back in the day but consistently died when trying it in 3D All-Stars.
Please do SM64 glitches next and see if they still work in the all-stars version! If the glitches are still there, that will be my motive to buy the game
Well this isn’t a glitch but in bubble breeze galaxy in the second section of the star your character backflip onto the rocks because I guess there’s some invisible block there. This works in both wii and switch, it could be a good thing to speed run. All you have to do is when your on the rocks just long jump to the star.

I believe there's a similar failsafe for the goomva glitch, the game won't let them run off the edge so they stop before reaching Mario

It's actually because SM64's version is based off of a re-release in Japan that added bug fixes (like BLJ), rumble support, and minor improvements

I've always wanted to try and launch Mario into orbit of a small planetoid, but never succeeded. Glad to know what happens now!
