Chicken Broccoli Rice Casserole -- Easy and Delicious
Chicken Broccoli Rice Casserole
2 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 bag of frozen broccoli thawed 16 0z.
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
One 10 ounce can cream of mushroom soup
Optional (1 tablespoon lemon juice)
10 ounces Cheddar, grated (about 2 1/2 cups)
Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 20 minutes. Drain the chicken and shred.
Spread the rice in an even layer in the baking dish.
Make a second layer with the shredded chicken.
Make another layer with the broccoli.
In a large bowl, mix the chicken soup, mushroom soup, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar.
Bake for 40 minutes;
Let stand for 5 minutes before serving.

My mom made a similar casserole in the 70's. She used Cheez Whiz vs. shredded cheese, and Minute Rice (eliminated pre-booking the rice), and topped it with crushed Lay's potato chips. It was So Good! Thanks for the memories of a great casserole!

Hi Marie and Calvin,
I am a very picky eater. The only living thing I eat once it is dead and cooked is ground beef. I don't even eat shredded beef or steak because I don't like them. What is weird is that as a child, I loved poultry, bacon, and fish. And now, as an adult, I detest them. For the ground beef, it has to be with other ingredients. I don't like it by itself. So, for that casserole, I would use ground beef and cream of celery soup. I don't like mushrooms either, lol. I would probably leave the rice as is or make a flavored rice depending on my mood. The broccoli is fine and the same for the onion. I might even add some colored bell peppers. And the cheese is a must. I would consider trying out one can of cream of celery and one can of cheddar cheese soup. The corn, pie,
and tomatoes look yummy.
I noticed that when Southerners say boil, it sounds like boll or bowl, and when Westerners say it, it sounds like boyal rhyming with royal. It catches me off guard at times. 😅
I am glad you guys enjoyed your dinner.
Yesterday, I went shopping. For me, yesterday was Wednesday. I went to a store called Winco. My caregiver was with me. She was a really big help to me. She went into the store and drove out the electric shopping cart for me to drive. She put my oxygen tank in the cart and helped me put the groceries into the cart. We had brought in four reusable bags, but it wasn't enough, so I had to buy some more disposable bags. (In Washington state, you have to pay eight cents per disposable bag or bring in your own reusable bag. It is a state law.) Anyhow, my caregiver put all the stuff onto the conveyor belt and bagged up the groceries. She then loaded the car and brought it all inside once we got to my place. And then she put the cold stuff away. I don't have a caregiver every day. So I really appreciate it when they come and help me out.
Finally, I wish I liked chicken. I have tried it a few times over the years to see if my taste buds have changed, but so far, they haven't.
