    @1kperday your assuming that someone's going to add a jar a bad tomato sauce. There are so many all-natural, high-quality brands that will taste as good as most people's homemade. I used homemade cause I had it If I didn't I would use a jar without guilt or concern.

    Oh my gosh this sounds SO good and easy......im italian so im always looking for a new sauce!!!
    ......I have to say that I am scared of the rosemary/bay leaf combo. Wouldnt it have a weird taste????

    @BonParaPara - you guys are both right chef johns humor can be easily misunderstood even for the dieheart fan - and chef john was just joking..but thats the awsome thing about youtube everyone has an opinion he has not berated you as some video owners do and demands you leave if u don't like it he just said what he wanted back the point here is what you as a person are willing to just let go or wanting to take very seriously is up to you and i for one think this one was very civil :)

    Chef John HUGE fan. I just made your enchiladas two nights ago. I made chili yesterday 😋 my future husband (fingers crossed) is very happy. However, I was wondering if this is your only steak pasta recipe ? And if so, will you consider redoing any of your older recipes ? I am trying this one tomorrow. Wish me luck!

    This looks wonderful, I'm going to try this one. You are right about the cream. The lactic acid in the milk does act as a meat tenderizer, it also is what neutralizes the capscacin that makes spicy peppers spicy. That is my know it all comment for the day. Thanks for sharing! Noreen

    Hello Chef John. I'm wondering if high pressure pot will help on the stewing and simmering process, since it could shorten the cooking time and break down meat tissue faster. Is that kinda cheating? I use it to tender beef briskets or pork belly when cooking them in Chinese style :P

    @GAYPRIDE1985 Mine is the third planet from our Sun. If you google "Italian Seasoning Ingredients" my point will be made. Most include Rosemary thyme basil oregano sage parsley onion pdr. and garlic pdr..... And my family is Italian as they come. We Always put a bay leaf is our red sauces. But maybe I am in some sort of weird paralell universe or something. It's no big deal, If you don't like it, then don't make it or eat it.

    I was wondering if it had to be cherry tomatoes or could you use any fresh tomatoes for this recipe? For example, I have some fresh, locally-grown tomatoes that are sweet & more meat than seed. I actually went a little overboard & bought more than I'll be able to eat sliced so if it were possible to use them in this recipe, that would be great! Thanks in advance for any advice you may have, Chef John. :)

    @ric0h shallots are sweeter, milder & have just a hint of onion flavor (they're cousins to the onion, after all, as is garlic) whereas onions tend to be more pungent, acrid & overpowering. It all depends upon the flavors you're trying to create & blend with. For example, in this recipe, a shallot is like some light, wafting classical music whereas an onion would be like a death metal sledgehammer. Why use a nuke when a .22 bullet would work just as well or better? :)

    my family is sorta differnt tastes my brother likes plain my other brother likes canned tomato sauce my grandmothe likes hers with butter and parmesion my father my mother and i like the meat sauce so we sorta have to ladle it over instead of melding it because of all of our different tastes is that allright john? any suggestions?
    p.s love the name so many people have that name so mamny good people john lennon john linnell john flansburgh jon paula ive just always loved the name

    @BonParaPara Chef John was just being honest, with a touch of humor.
    But, if we ARE going to be nitpicking with words, he's absolutely right, it is not possible to BE a vegan, saying "but I'd eat that" - the definition of a vegan is a person that by principle avoid all animal products, hence the conclusion that he's not a vegan. However, it is possible that LapisGartner is a vegetarian, probably by force or conviction (not by choice) - that he would eat meat, but just doesn't (for some reason..)

    It's ok Chef John. I understand you sarcastic humor because I too have that same humor and many people can find me offensive too. Relax people, take a joke. I know its hard to tell sarcasm online, but it's quite apparent that's how the man is!
    Love the recipe too by the way. I just might change the way I make meat sauce for ever now!

    one thing i really like about Foodwishes is there are only a select few recipies that really require any special "unique" ingrediants or crazy, fancy techniques. The explanations of doing things like reducing something or making a quick sauce are usually lost on people but here they are easy to understand and the food always looks good

    @foodwishes Just because you have thoughts of something delicious that isn't in the vegan profile..doesn't mean you aren't a vegan. I know a lot of people who love bacon and what not, but choose to not eat it. That's just how it is..mainly based on if you eat meat or not.

    I'm wondering if you could add the pasta in the dutch oven at the point the recipe says you should simmer with the lid off and pour it in a ovendish and cook it in the oven for 30-45 minutes?
