I have had this unit for about 10 years and have never used it for anything but basic. The reason? I could NOT figure out how to program it to not bake for rolls, etc. Packed it away for 8 years and started using my kitchen aide. Stumbled upon your video and! PRAISE BE!! I now understand it! I now am making a batch of Italian bread rolls while I scan your videos!! THANK YOU!

I bought a used older Zojirushi Bread Machine for only $4 at a thrift store. Worked great but no manual. I couldn't figure out how to program it and the dough setting was not exactly a dough setting. Drove me nuts until I saw this video how to program it. I programmed a dough setting tonight to just knead the bread and it worked great. Only took 20 min and the dough was great. Thanks for making this video. Really helped me.
Thank you this is so helpful, I couldn't figure out how to use the machine, the directions with the machine were confusing, I am a visual person, so seeing the directions is better for me. Now I am in the process of making my first loaf of freshly milled Einkorn flour bread with my new zojirushi breadmaker!

I would love to see a Zo Virtuoso homemade setting tutorial update. How do you decide on how long each knead, rise and how long to bake.

There is a basic setting list in the Red Bread Beckers Cookbook. However, each setting will be determined by your own living space. For example, my rise time is different than my neighbor's rise time. Also, if my bread machine is sitting next to my fridge or the other side of the kitchen, the I have to adjust it as well. You can start with the general settings, but you will need to adjust according to your home.

Thanks so much! I have baked bread for 35 years by hand and just have discovered bread machines. I just have bought the Zo Virtuosa and I love it!
But did you realize that you are supposed to pronounce the j in Zojirushi? They pronounce it on the Zo website in their videos. It is a Japanese word. You wouldn't pronounce the J if it were a Spanish word.

No way José! How can you not pronounce that "J", different languages use "J" to represent different sounds, not silence.
In the home made cicle, what the machine does between rise 1 and 2…..? Knead again ?
HI. Yes, the machine can knead between cycles. You will need to tell it how long you would like for the knead to be and how long you want each rise to be. If the 2nd rise is set for too long, the loaf will, more-than-likely, fall and not be fluffy. Hope that helps.
I wish you would say what type of yeast
We use fresh yeast and have yet to get just right

Would heat and humidity cause my loaf to start rising too much? I’ve been using this programming since November but just now the tops of my loaves are coming out a bit raw.. would could be the solution for this?
Yes. It will definitely affect it. Yeast thrives in warm and moist places. Decrease your 2nd rise time a bit, and that should help.

We can certainly put that on the list of new videos to make. However, the instructions in your owners manual are very simple to follow. The new models are much easier to set which is why we haven't felt the need to make a new version. But, we will add it to the list. :)

Does anyone have a hack that stops the kneading cycle from stopping when you open the lid of the Zojirushi Virtuoso? (I want the kneading to continue as I dust in additional flour on Dough Cycle) thanks!

How large does the 1.5 pound loaf come out? I make one pound loaves from fresh milled and really don’t want two pound loaves. So I guess what I’m asking is the loaf just flatter?
Thanks for asking. You can determine your loaf size by the amount of ingredients you add to the machine. If you need a smaller loaf, try cutting the ingredients in half. Hope that helps.
