I tried this for breakfast this morning. I was thinking this would be an interesting variation on doing scrambled eggs, but I had no idea they were going to turn out as good as they did! They were just wonderful. I'll certainly continue to cook them this way.
I just made these, I didnt have any creme fraiche on hand, but they were still absolutely stellar! Hands down, the BEST method of making scrambled eggs!
I love this reciepe for scrambled eggs. It's fantastic. It took a few times to get it the way he has it, but there is no going back to American style scrambled eggs after you've add this.
Parsley I've used before. Glad to hear everyone is digging the chives! I love that they showed him actually folding in the chives. Whenever you see those chopping closeups, it looks like soooo much. But he really didnt add a lot. Just a 'nice' amount!
The coolest thing is, you can come up with variations of the recipe if you replace the sour creme with any number of creamy cheeses. The most important thing is to keep the eggs moving on and off the heat. The texture, and taste, is just amazing.

I just did, just use as much as butter as he did and with a spatula mix it until you see it become fluffy. As soon as it gets fluffy try it out and it's good to go. If you add cream you need to put it back on the stove on more time to bring it back up to a good temperature.

This is great; my mother caters for some suits and and definitely knows how to cook, but these were the best scrambled eggs I've ever had! Sorry Mom! I used some salted cooking butter, organic cage-free Eggland's Best eggs, and Daisy brand sour cream for anyone wondering. This was also my first time using a saucepan for scrambled eggs, and I doubt I will ever go back to using a skillet... Use a saucepan! Over toast is best too!
Just actually tried this for the 1st time today and holy S%$t what a difference in taste and texture. I always made my eggs in a flat pan and they always were semi cooked and over cooked. I saw this recipie and tried it several times. 1st time - Over cooked the eggs slightly 2nd - Too much salt and pepper 3rd - added too much creme fraiche 4th - nailed it! I'm lactose intolerant, so I made this with Earth Balance buttery spread in place of the butter and coconut milk in place of the creme fraiche. Pretty good substitutes, though they turn out a little thin (keep stirring)
Your way sounds amazing but I just tried it his way and it was NOT runny. It was light and fluffy and marvelous. Just a different texture that's all. Besides the creme fresh is optional because I didn't use it and it still tasted great.

For the record, I mixed in Applegate Sunday Bacon along with the generous amount of chives. I also used cremini mushroom caps, moderately stuffed with thinly sliced garlic, and let them spend a lot of low-heat time in the pan, bottom-side-down to roast the garlic a bit. Orange bell pepper strips got a nice simultaneous sear. I also used my favorite organic grape tomatoes, previously fire-roasted over real lump charcoal, and warmed them alongside the caps near the end. Rosemary/olive oil bread.
Ok this was my second attempt at these. My first ones were a bit too dry and compact, that's because I cheaped out on the butter. Make sure you put as much butter as Ramsey does, especially if you don't put any creme freche afterwards. They are easy to do on a non-stick pan btw. Great!

A good toaster will have a varying dial to toast things different rates. Unfortunately if you aren't extremely familiar with the particular toaster, it all comes down to guesswork and you'll usually wind up popping up while the bread's white, or burning it.

You'd probably want to cook it on lower heat, just a tiny bit. It'll cook the eggs slowly so big chunks don't cook while the pan is directly over the heat.
Take it on/off the heat 5 or 6 times and put some elbow grease into it. Follow his instructions exactly and don't leave it on the heat for more than 15 or so seconds maximum. You know you've got the right consistency when you have a fork-full and turn the fork sideways, it will take 5 or 10 seconds before it starts to fall off. Good luck!

You can reduce the portion of butter, and use a low-fat creme, but they both serve a specific purpose in the cooking process. The butter helps bind the eggs to keep a consistent structure (even cooking) and the creme slows down the cooking process. An alternative to creme would to be to serve on a chilled plate, maybe a bowl sitting in an ice bath.
This recipe is AWESOME! Made this countless times at home, and it tastes delicious! Similar to the scrambled eggs sold at Macs ^^ One difference might be that Gordon Ramsay makes it a little watery. I like mine a little dryer. But it was awesome anyways! :D

I didn't have creme fraiche or sour cream, so I just added a little bit of whipping cream at the end. These are seriously the best scrambled eggs I've ever had.
