It's definitely overdone! What kind of cooker did you use? Looks like the end of the flat got blasted ... Did you rotate at any point? Edit: ah, you said Weber? I assume smokey mountain? Also why cut off the top of the point!! :( That hurt ... For cookers with the heat element on the bottom, cook with the fat side down 👇
Old country pits smokehouse. My 2nd brisket on this cooker. I didn't rotate. It's a vertical cabinet. Everything was still good. A sharp knife would have helped immensely.
